Air Fryer Chicken Parmesan
Why this recipe works
- Crisp coating: Panko breadcrumbs and a light coating of oil help the chicken brown evenly in the air fryer.
- Classic flavour: Tomato sauce, mozzarella, Parmesan and basil give the dish its familiar chicken Parmesan character.
- Faster than oven-baking: The air fryer cooks the breaded chicken quickly while keeping the coating crisp and the centre tender.

Texture tips
- For a crisper crust: Keep the chicken in a single layer and cook in batches if needed so hot air can circulate around each piece.
- For even cooking: Slice very thick chicken breasts horizontally into thinner cutlets to reduce the risk of over-browning before the centre is cooked.
- Add sauce near the end: Warm the tomato sauce separately and spoon it over the chicken only before melting the cheese to help protect the crumb coating.
Ingredient notes
- Panko for crunch: Panko gives a lighter, more open crumb than fine breadcrumbs, which helps the coating crisp in the air fryer.
- Mozzarella choice: Low-moisture mozzarella melts neatly and releases less liquid, which is useful when keeping the topping tidy.
- Herb flavour: Dried oregano keeps the seasoning classic, while Italian seasoning gives a broader dried-herb flavour.
Common mistakes
- Overcrowding the basket: If the chicken overlaps, the coating can steam rather than crisp. Leave space between pieces or cook in batches.
- Cooking thick breasts whole: Very thick pieces can brown too much on the outside before cooking through, so make them thinner before breading.
- Boiling the sauce: Heat the tomato sauce until steaming rather than boiling so it stays smooth and does not splash over the coating.
Make-ahead tips
- Prep the components: The breadcrumb mixture can be combined ahead, and the sauce can be warmed when needed for easier assembly.
- Best served fresh: Chicken Parmesan has the best contrast between crisp coating and melted cheese when served straight from the air fryer.
- Reheating leftovers: Reheat refrigerated leftovers on a baking tray in a 180°C (355°F) oven until piping hot; the coating will soften slightly but re-crisps better than in a microwave.

Ingredients
Instructions
- Bring a large pot of water to the boil and salt it with 1 tsp of the fine sea salt. Cook the spaghetti until al dente, then drain and keep warm.
- Meanwhile, pat the chicken dry and season all over with the remaining fine sea salt and the black pepper. Beat the eggs in a shallow bowl. In a second bowl, mix the panko breadcrumbs with the Parmesan and dried oregano.
- Dip each chicken breast in the egg, let the excess drip off, then press into the panko mixture to coat well. Drizzle or brush the coated chicken with the olive oil to help it brown evenly.
- Air-fry at 200°C (390°F) for 10 minutes, then turn and cook for 4 to 8 minutes more, until deeply golden and the chicken is cooked through. If your air fryer is small, cook in batches so the chicken sits in a single layer.
- Warm the tomato sauce gently in a small saucepan until steaming, not boiling. Spoon the sauce over each chicken breast, then top with mozzarella and a little extra Parmesan from the bowl if any remains. Return to the air fryer for 2 to 4 minutes, until the cheese is melted and bubbling.
- Rest for 2 minutes, then scatter over the fresh basil. Serve straight away with the spaghetti alongside, spooning over any extra warm tomato sauce if you like.
Recipe notes
Tips
- For the best crunch, avoid overcrowding the air fryer basket and cook in batches if needed.
- If the chicken breasts are very thick, slice them horizontally to make thinner cutlets so they cook evenly without over-browning.
- Food safety: make sure the chicken is piping hot throughout, with no pink remaining, before serving.
Substitutions
- Replace panko breadcrumbs with breadcrumbs for a finer, more even coating.
- Replace mozzarella with low-moisture mozzarella for less leakage and faster melting.
- Replace dried oregano with Italian seasoning for a more rounded herb flavour.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate. Reheat on a baking tray in a 180°C (355°F) oven for 10 to 15 minutes until piping hot; the coating will soften slightly, but will re-crisp better than in the microwave.
