Gratin de Légumes (French Vegetable Gratin with Gruyère)

A French vegetable gratin turns simple sliced vegetables into a generous baked dish with tender layers, a creamy sauce and a burnished cheese top. Here, potatoes provide structure, courgettes soften into the cream, and leeks bring gentle sweetness after being cooked with garlic. Nutmeg gives the milk and double cream a classic savoury warmth, while Gruyère melts into a deeply golden crust. Rich enough for a vegetarian dinner but equally suited as a side dish, it is best rested briefly before serving so the sauce settles and the portions hold together.

Why this recipe works

  • Creamy, set layers: Warming the cream and milk before baking helps the sauce settle evenly between the vegetables.
  • Gentle savoury depth: Softened leek, garlic and nutmeg give the gratin more complexity without overwhelming the vegetables.
  • Golden gratin finish: Gruyère melts into a deeply savoury topping while the potatoes and courgettes turn tender underneath.

Texture tips

  • For neater slices: Let the gratin rest before serving so the cream thickens slightly and the layers hold together better.
  • Keep the vegetables distinct: Slice the potatoes evenly and avoid cutting the courgette too thin, as it softens faster than the potato.

Ingredient notes

  • Use a good melting cheese: Gruyère gives the classic nutty flavour and golden finish; Emmental is milder but still melts well.
  • Wash the leek thoroughly: Leeks can hold grit between the layers, so trim, split and rinse them well before slicing.
  • Cream changes the sauce: Double cream gives the richest, most stable texture. Single cream makes a lighter gratin with a looser sauce.

Timing notes

  • Rest before serving: The 10-minute rest is important: it allows the sauce to settle and makes the gratin easier to portion.
  • Best served hot: Serve while the top is still golden and bubbling, with a little of the creamy sauce spooned over each portion.

Common mistakes

  • Check the potatoes: The gratin is ready only when a knife slides through the potato layers with little resistance.
  • Protect the topping: If the cheese browns before the potatoes are tender, cover the dish loosely and continue baking.
  • Avoid uneven slices: Thick or irregular potato slices can stay firm while the courgette becomes too soft.

  1. Heat the oven to 190°C (375°F). Rub a baking dish all over with a little of the unsalted butter, then set aside.
  2. Peel the russet potato and slice it thinly, about 2 to 3 mm. Trim and wash the leek well, then slice it; slice the courgette into thin rounds.
  3. Melt the remaining butter in a frying pan over medium heat. Add the leek with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened but not browned; finely grate in the garlic and cook for 1 minute more.
  4. In a saucepan over low heat, warm the double cream and whole milk until steaming but not boiling. Whisk in the remaining fine sea salt, black pepper and ground nutmeg, then take off the heat.
  5. Arrange half the potatoes in the dish, slightly overlapping. Spoon over half the leek mixture, then add half the courgette; repeat the layers, finishing with courgette on top.
  6. Pour the warm garlic cream evenly over the vegetables, pressing down lightly so the liquid settles between the layers. Cover the dish tightly and bake for 35 minutes, until the potatoes are starting to soften.
  7. Uncover, then grate the Gruyère cheese over the top. Bake for 20 to 25 minutes until bubbling and deeply golden, and a knife slides into the potatoes with little resistance.
  8. Rest the gratin for 10 minutes before serving so it sets and slices neatly. Serve hot, spooning a little of the creamy sauce over each portion.

Recipe notes

Tips

  • Slice the potatoes evenly so they cook at the same rate; a mandoline makes this quick and consistent.
  • If the top is browning before the potatoes are tender, cover loosely and continue baking until a knife goes through easily.

Substitutions

  • Replace Gruyère cheese with Emmental cheese for a milder, similarly melty topping.
  • Replace double cream with single cream for a lighter gratin; expect a looser sauce.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the top darkens too quickly.
