Cazuela de Mariscos (Chilean Seafood Casserole)
Why this recipe works
- Deep savoury base: Red onion, pepper, garlic, tomato, paprika, wine and fish stock build a rounded broth before the seafood is added.
- Bright finish: Tomato, white wine and lemon balance the natural richness and salinity of the mussels, prawns and fish.
- Seafood cooks fast: The broth develops first, then the seafood is added at the end so it stays tender and the whole dish remains manageable for a weeknight.

Authenticity notes
- Chilean cazuela style: In Chilean cooking, cazuela often refers to a hearty, broth-led stew rather than a baked casserole; the liquid is an essential part of the dish.
- Flexible seafood mix: The exact seafood can vary with availability, but a mix of shellfish and firm white fish keeps the dish varied in flavour and texture.
Timing notes
- Serve straight away: This cazuela is at its best as soon as the fish is opaque, the prawns are pink and the mussels have opened.
- Build the broth first: Let the vegetables, tomatoes, wine and stock form the base before adding seafood, which needs only a short, gentle simmer.
Ingredient notes
- Check the mussels: Use fresh mussels with closed shells, discarding any that are cracked or do not close when tapped before cooking.
- Choose firm white fish: A firm, skinless white fish holds together better in the broth than delicate fillets that flake apart quickly.
- Finish with lemon: Add lemon at the end rather than early in the simmer so the broth tastes fresh and bright.
Ingredient swaps
- Without wine: Replace the white wine with extra fish stock for an alcohol-free broth, then adjust the lemon at the end for brightness.
- Smokier broth: Use smoked paprika instead of sweet paprika if you want a deeper, lightly smoky flavour.

Ingredients
Instructions
- Warm the olive oil in a large pot over a medium heat. Slice the red onion and red pepper, then add them to the pot and cook for 6 to 8 minutes until softened.
- Crush the garlic and stir it in with the sweet paprika for 30 seconds until fragrant. Roughly chop the tomatoes, add them, and cook for 3 to 4 minutes until they start to break down.
- Pour in the white wine and simmer for 2 to 3 minutes to cook off the alcohol. Add the fish stock and bring to a gentle simmer.
- Rinse the mussels and discard any that are cracked or do not close when tapped. Add the mussels, cover, and cook for 4 to 6 minutes, shaking the pot once, until most have opened.
- Cut the white fish into large chunks and add them to the broth along with the prawns. Simmer gently for 3 to 5 minutes until the fish is just opaque and the prawns are pink; discard any mussels that remain closed.
- Finely chop the parsley and stir it through. Squeeze in lemon juice to taste and serve straight away, spooning plenty of broth over the seafood.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle once the seafood goes in; a hard boil can make the fish flake apart and the prawns turn tough.
- If your mussels are very sandy, soak them briefly in cold water, then rinse well before cooking.
- For anyone who is pregnant, elderly, or immunocompromised, make sure the seafood is thoroughly cooked and serve the casserole piping hot.
Substitutions
- Replace White wine with the same amount of Fish stock for an alcohol-free broth.
- Replace Sweet paprika with smoked paprika for a deeper, smokier flavour.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat until piping hot, stirring carefully so the fish stays in pieces; discard any leftover mussels that have been reheated more than once.
