Moules Marinières with Crusty Bread

In the French coastal classic moules marinières, fresh mussels are steamed just until open in a fragrant base of dry white wine, shallot, garlic and herbs. The dish is prized for its speed and simplicity: the mussels release their own briny juices into the wine, forming a light savoury broth that needs very little embellishment. Here, butter and a small amount of double cream round out the cooking liquor without making it heavy, while parsley keeps the finish fresh. Serve straight from the pot with plenty of crusty white bread, as the broth is as much a part of the dish as the mussels themselves.

Why this recipe works

  • Fast cooking: Mussels need only a brief steam once the wine is simmering, keeping the dish quick and the shellfish tender.
  • Simple aromatic base: Shallot, garlic, dry white wine and parsley create a clean, savoury broth without overwhelming the mussels.
  • Glossy finish: Butter and a small amount of cream round out the cooking liquor, giving the sauce body while keeping it light enough for dipping bread.

Ingredient notes

  • Choose live mussels: Use fresh, live mussels and discard any with cracked shells or any that do not close when tapped before cooking.
  • Use a dry white wine: A crisp, dry white wine keeps the broth bright and savoury; avoid anything sweet, which can make the sauce taste heavy.
  • Clean just before cooking: Rinse and debeard the mussels shortly before they go into the pot so they stay fresh and do not sit in excess water.

Texture tips

  • Keep the steaming brief: Cook the mussels only until they open; leaving them on the heat for too long can make them firm and rubbery.
  • Warm the cream gently: After adding the cream, keep the heat low and avoid boiling so the sauce stays smooth and glossy.

Timing notes

  • Prep first, cook fast: Have the shallot, garlic, parsley and bread ready before the mussels go in; the cooking stage moves quickly.
  • Serve immediately: Moules marinières is best eaten as soon as the mussels are coated in the hot broth, while the shells are steaming and the sauce is fresh.
  • Best freshly cooked: Leftovers can be chilled briefly, but the texture and flavour are at their best straight from the pot.

Authenticity notes

  • Marinière method: The defining technique is steaming mussels in wine with aromatics, allowing their own juices to season the broth.
  • Cream variation: Cream is a common richer finish, while many simpler versions keep the broth wine-based with butter, herbs and shellfish juices.
  • Classic serving: Crusty bread is ideal for soaking up the broth; chips or a simple green salad also suit the bistro-style serving.

  1. Rinse the mussels in cold water, pulling off any beards and discarding any that are cracked or do not close when tapped. Peel and finely chop the shallots, and peel and finely slice the garlic. Roughly chop the parsley.
  2. Melt the butter in a large pot over a medium heat. Add the shallots and cook for 2 to 3 minutes until softened but not coloured, then stir in the garlic for 30 seconds until fragrant. Pour in the white wine and bring to a lively simmer.
  3. Tip in the mussels, cover with a lid and steam for 4 to 6 minutes, shaking the pot once or twice, until the mussels have just opened. Tip into a colander set over a bowl to catch the cooking liquor, then discard any mussels that remain closed. Return the pot to a low heat.
  4. Pour the reserved cooking liquor back into the pot, leaving any grit behind in the bowl. Stir in the double cream and black pepper, and warm gently for 1 to 2 minutes until glossy; do not let it boil. Add the parsley, return the mussels to the pot, and toss just to coat and heat through.
  5. Serve the mussels straight away with the crusty white bread for mopping up the sauce. Spoon plenty of the broth over each portion.

Recipe notes

Tips

  • Keep the heat high once the mussels go in and keep the lid on so they steam quickly and stay tender.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the mussels are thoroughly cooked and discard any that do not open.

Substitutions

  • Replace double cream with crème fraîche for a slightly tangier finish, but keep the heat low so it does not split.
  • Replace fresh parsley with fresh dill for a softer, aniseed note.

Storage

  • Refrigerate up to 1 days
  • Best eaten straight away. If you have leftovers, remove the mussels from their shells and chill in the sauce; reheat gently in a saucepan over a low heat until piping hot, without boiling.
