Revithada (Slow-Baked Greek Chickpeas)
Why this recipe works
- Slow-baked depth: Gentle oven cooking gives the chickpeas time to soften fully while the onion, garlic, oregano and bay infuse the cooking liquor.
- Naturally creamy finish: As some chickpeas break down during baking, they thicken the liquid without needing flour, cream or blending.
- Simple ingredients, clear flavour: Olive oil, herbs and lemon keep the dish savoury and balanced, letting the chickpeas remain the focus.
- Keeps well: The stew reheats gently with a splash of water and can be refrigerated or frozen, making it useful for batch cooking.

Timing notes
- Soak before cooking: The chickpeas need a long soak before baking so they cook evenly and soften all the way through.
- Mostly inactive time: Active preparation is brief; most of the recipe is soaking and slow oven cooking.
- Serve once creamy: The dish is ready when the chickpeas are very tender and the cooking liquor has thickened slightly, not while it is still thin and watery.
Texture tips
- Bake until some chickpeas collapse: A few broken-down chickpeas help create the characteristic creamy sauce around the beans.
- Check the liquid level: If the pot looks dry during the uncovered bake, add a splash of water so the chickpeas continue softening rather than drying out.
Ingredient notes
- Use dried chickpeas: Dried chickpeas are important here because they absorb flavour gradually and release starch as they bake.
- Choose a good olive oil: Extra virgin olive oil is central to the flavour, so use one with a clean, savoury character rather than a harsh bitterness.
- Add lemon at the table: Serving lemon separately keeps the stew mellow in the pot and lets each portion be brightened to taste.
Make-ahead tips
- Plan the soak: Soak the chickpeas the night before so the cooking can begin without delay the next day.
- Reheat gently: Warm in a saucepan with a splash of water, stirring to loosen the thickened liquor until piping hot.
- Freeze cooked portions: Cool completely before freezing, then thaw and reheat gently to preserve the creamy texture.

Instructions
- Put the chickpeas in a large bowl and cover with plenty of cold water. Leave to soak for 10–12 hours, then drain and rinse well.
- Heat the oven to 160°C (320°F). Thinly slice the onion and slice the garlic.
- Tip the chickpeas into a dutch oven and add the onion, garlic, bay leaves, oregano, fine sea salt, black pepper and extra virgin olive oil. Add 900 ml water and stir, then bring to a gentle simmer on the hob.
- Cover and bake for 2 hours, then uncover and bake for 1–1.5 hours more, stirring once or twice, until the chickpeas are very tender and the cooking liquor is creamy and slightly thickened. If it looks dry at any point, add a splash of water and continue baking.
- Remove the bay leaves. Cut the lemon into wedges and serve alongside for squeezing over at the table.
Recipe notes
Tips
- For the creamiest texture, bake until a few chickpeas are starting to break down when you stir; that is what thickens the liquor naturally.
- If you are serving vulnerable groups, make sure the chickpeas are fully tender all the way through before eating.
Substitutions
- Replace the lemon with lime for a sharper, more aromatic finish.
- Replace dried oregano with fresh oregano for a softer herbal note.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot, stirring to loosen the creamy liquor.
