Tarka Dal with Crispy Shallots

In tarka dal, soft-cooked lentils provide the gentle, spoonable base for a hot spiced tempering added just before serving. Here, yellow lentils simmer with turmeric, ginger and garlic until they begin to break down, giving the dal a naturally creamy texture without needing cream. The tarka brings the defining fragrance: ghee blooms mustard seeds, dried chilli, curry leaves and cumin, releasing their aroma into the lentils. Crisp fried shallots add sweetness and crunch, making the dish feel more complete. Serve with steamed rice for an easy vegetarian dinner that is warming, savoury and deeply satisfying.

Why this recipe works

  • Sizzling spice finish: Blooming the spices in hot ghee releases their aroma before they are poured over the lentils.
  • Soft, spoonable dal: Simmering the lentils until they begin to break down creates a naturally creamy base without needing cream.
  • Crisp topping: Golden shallots bring sweetness and crunch, balancing the soft texture of the lentils.

Adjust the heat

  • For less heat: Leave the dried chilli whole and remove it before serving, or use paprika for a gentler warmth.
  • For more heat: Lightly crush the dried chilli before adding it to the ghee so it releases more flavour into the tarka.

Ingredient notes

  • Choose the right lentils: Yellow lentils work well because they soften readily and break down into a smooth, comforting dal.
  • Use ghee for depth: Ghee gives the tarka its nutty richness and carries the spice aromas particularly well.
  • Curry leaf alternatives: Fresh curry leaves add a distinctive citrusy aroma; if unavailable, extra cumin gives warmth but not the same fragrance.

Texture tips

  • For a smoother dal: Whisk the lentils briefly in the pan once they are fully soft.
  • Adjust the consistency: Add a splash more water if the dal thickens too much before serving.
  • Keep the shallots crisp: Fry them over moderate heat until deep golden, then drain well and add just before serving.

Make-ahead tips

  • Cook the dal ahead: The lentil base can be made in advance and reheated gently with a little water to loosen it.
  • Separate the topping: Keep the dal and shallots separate if storing, as the shallots soften once chilled.
  • Freezer-friendly base: Freeze the dal without the fresh coriander or crispy shallots, then defrost overnight before reheating.

Instructions

  1. Rinse the lentils in a sieve until the water runs clearer. Peel and finely grate the ginger, and peel and finely grate the garlic. Thinly slice the shallots and pick the coriander leaves.
  2. Put the lentils in a saucepan with the water, turmeric, ginger, garlic and fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 20 to 25 minutes, stirring now and then, until the lentils are very soft and starting to break down. If it looks too thick, add a splash more water; if too thin, simmer uncovered for a few minutes.
  3. While the lentils cook, heat half the ghee in a large frying pan over a medium heat. Add the shallots and fry, stirring often, for 10 to 12 minutes until deep golden and crisp. Lift out with a slotted spoon and set aside; keep the pan on the hob.
  4. Add the remaining ghee to the same pan and heat until shimmering. Tip in the mustard seeds and dried red chilli and cook for 30 to 60 seconds until the seeds start to pop, then add the curry leaves and ground cumin and cook for 20 to 30 seconds until fragrant. Take off the heat straight away so the spices do not burn.
  5. Stir the dal well; for a smoother texture, whisk briefly in the pan. Ladle into bowls, spoon the hot tarka over the top, then finish with the crispy shallots and coriander. Serve straight away while the topping is still sizzling.

Serving suggestions

This recipe pairs well with:

Steamed rice

Tips

  • For extra fragrance, lightly crush the dried red chilli before adding it to the hot ghee so it releases more flavour.
  • Keep the heat moderate when frying the shallots; if they brown too quickly they will taste bitter before they turn crisp.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the dal is simmered until piping hot throughout.

Substitutions

  • Replace ghee with unsalted butter for a similar richness, keeping the heat a touch lower to prevent it browning too quickly.
  • Replace dried red chili with 0.5 tsp hot paprika for a gentler, more even heat.
  • Replace fresh curry leaf with 1 tsp ground cumin added to the tarka for extra warmth if curry leaves are unavailable.

Storage

  • Refrigerate up to 3 days
  • Cool the dal quickly, then refrigerate in an airtight container. Reheat gently in a saucepan with a splash of water until piping hot; fry fresh shallots for topping if you can, as they lose their crispness after chilling. Freeze the dal (without toppings) for up to 3 months and defrost overnight in the fridge before reheating.
