Risotto al Limone (Creamy Lemon Risotto)
Why this recipe works
- Naturally creamy texture: Arborio rice releases starch as the hot stock is added gradually, creating a creamy risotto without needing cream.
- Bright but balanced: White wine and lemon cut through the butter and Parmesan, keeping the finished dish rich but not heavy.
- Classic risotto method: Toasting the rice first and finishing with butter and cheese gives the grains structure, gloss and a flowing consistency.

Timing notes
- Serve straight away: Risotto continues to thicken as it stands, so serve it soon after the short rest while it is still loose and glossy.
- Brief rest only: A short rest after adding the butter and Parmesan helps the risotto settle without losing its flowing texture.
Texture tips
- Keep it flowing: The finished risotto should slowly spread on the plate. If it tightens before serving, loosen it with a little hot stock.
- Add cheese off the heat: Stirring the Parmesan in after removing the pan from the heat helps it melt smoothly rather than turning grainy.
- Stop at al dente: Begin checking the rice near the end of cooking; the grains should be tender with a slight firmness at the centre.
Ingredient notes
- Choose the right rice: Arborio works well because it releases starch while keeping enough bite for a properly textured risotto.
- Use unwaxed lemon if possible: Because the zest is central to the flavour, an unwaxed lemon is preferable; wash and dry it well before zesting.
- Add lemon juice gradually: Stir in the lemon juice to taste at the end so the citrus lifts the risotto without overpowering the cheese and stock.
Common mistakes
- Avoid boiling hard: A steady, gentle simmer gives the rice time to cook evenly while the starches create a creamy consistency.
- Do not add all the stock at once: Adding stock gradually helps control the texture and prevents the risotto from becoming soupy or unevenly cooked.
- Keep the stock hot: Cold stock slows the cooking each time it is added and can make the risotto heavier in texture.

Ingredients
Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Finely chop the shallot. Zest the lemon, then squeeze the juice and keep both aside.
- Melt 30 g of the butter in a large frying pan over a medium-low heat. Add the shallot and cook for 4 to 6 minutes until soft and translucent, without letting it colour.
- Stir in the arborio rice and cook for 2 minutes, stirring, until the grains look slightly translucent at the edges. Pour in the white wine and cook, stirring, until it has almost completely evaporated.
- Add a ladleful of hot stock and stir until it is mostly absorbed. Continue adding stock a ladle at a time, stirring frequently, keeping the risotto at a steady, gentle simmer. Cook for 18 to 22 minutes until the rice is al dente and the risotto is loose and creamy; you may not need every last drop of stock.
- Take the pan off the heat and stir in the lemon zest and 2 to 3 tbsp of the lemon juice, to taste. Finely grate the parmesan, then stir it in with the remaining 30 g butter until glossy and creamy. Rest for 2 minutes, then serve straight away.
Recipe notes
Tips
- Keep the stock at a gentle simmer; adding cold stock slows cooking and can make the risotto gluey.
- Aim for a flowing texture that slowly spreads on the plate; if it tightens up, loosen with a splash of hot stock before serving.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use a wine labelled alcohol-free and still cook it off as directed.
Substitutions
- Replace White wine with Vegetable stock for an alcohol-free risotto; add it in the same way and cook until mostly absorbed.
- Replace Shallot with a small amount of White onion for a slightly stronger base flavour.
- Replace Parmesan with Grana padano cheese for a similar salty, nutty finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of vegetable stock, stirring until piping hot and creamy again; add a little extra lemon juice at the end if it tastes muted.
