Pea and Mint Risotto with Crispy Pancetta
Why this recipe works
- Creamy without cream: Arborio rice releases starch as stock is added gradually, giving the risotto its classic loose and creamy texture.
- Crisp pancetta contrast: The pancetta adds a savoury crunch against the soft rice and tender peas.
- Freshness cuts the richness: White wine, peas and mint keep the butter and Parmesan from feeling heavy.

Timing notes
- Serve immediately: Risotto thickens as it sits, so bring it to the table as soon as the Parmesan, butter and mint have been stirred through.
- Prepare before you start stirring: Have the stock hot, pancetta crisped, and peas, mint and Parmesan ready before the rice begins cooking; the final stage moves quickly.
Texture tips
- Keep it loose: The finished risotto should gently flow rather than sit in a stiff mound. If it tightens, loosen it with a little more hot stock.
- Stop while the rice has bite: Remove the pan from the heat when the rice is tender but still slightly firm in the centre; it will continue softening as it rests.
Ingredient swaps
- Without wine: Use extra hot vegetable stock in place of the white wine for an alcohol-free version.
- If you do not have shallots: A small amount of yellow onion works well, though it gives a slightly stronger allium flavour.
Make-ahead tips
- Prep components ahead: The pancetta can be crisped and the mint, Parmesan and shallot prepared in advance, but cook the rice just before serving.
- Reheat gently: Leftovers can be warmed in a saucepan with a little vegetable stock, stirring until piping hot and loosened. The texture will be softer than freshly made.

Ingredients
Instructions
- Pour the hot vegetable stock into a saucepan and keep it at a gentle simmer over a low heat while you make the risotto.
- Set a large frying pan over a medium heat and fry the pancetta until deeply golden and crisp. Lift out to a plate, leaving the fat in the pan.
- Add the olive oil to the pan, then finely chop the shallot and cook it with a pinch of the butter until soft and translucent. Keep the heat moderate so it does not colour.
- Stir in the arborio rice and cook for 1 to 2 minutes until the grains look slightly translucent at the edges. Pour in the dry white wine and stir until it has almost completely evaporated.
- Add a ladleful of hot stock and stir until absorbed, then continue adding stock a ladle at a time, stirring often. Cook for 18 to 22 minutes, until the rice is tender with a slight bite and the risotto is loose and glossy.
- Stir in the green peas and cook for 2 to 3 minutes until hot and tender. Take the pan off the heat.
- Finely chop the fresh mint and grate the parmesan, then stir both into the risotto with the remaining butter and the black pepper. Rest for 1 minute, then serve straight away topped with the crispy pancetta.
Recipe notes
Tips
- Keep the stock hot throughout; adding cold stock slows cooking and can make the risotto gluey.
- Aim for a loose, flowing texture at the end; if it tightens before serving, stir in a splash more hot stock to loosen.
Substitutions
- Replace Dry White Wine with the same amount of Vegetable stock for an alcohol-free version.
- Replace Shallot with 0.5 medium Yellow onion for a slightly stronger allium flavour.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of vegetable stock, stirring until piping hot and loosened; the texture will be less glossy than when freshly made.
