Modern Vegetable Paella (Saffron Rice with Artichokes and Peppers)
Why this recipe works
- Classic paella technique: Once the stock is added, the rice is levelled and left unstirred so it cooks evenly and can form a lightly crisped base.
- Deep savoury base: Softened onion, garlic, smoked paprika and reduced tomatoes create a concentrated base before the saffron stock goes in.
- Light socarrat: A brief increase in heat at the end encourages the bottom layer of rice to crisp without drying out the vegetables.
- Easy to serve: The paella can be brought to the table in the pan and finished with lemon, making it practical for informal sharing.

Authenticity notes
- Vegetable-led version: This is a modern meat-free paella, using artichokes, peppers, beans and peas to give the rice colour, texture and substance.
- Do not stir the rice: After the stock is added, shaking the pan to level the rice is preferable to stirring, which can make the texture heavier.
- Bomba rice matters: Bomba rice is well suited to paella because it absorbs flavourful stock while keeping a defined, separate grain.
Timing notes
- Serve soon after resting: Paella is best served after its short rest, while the rice is hot and the base still has some crispness.
- Let the pan settle: A brief rest off the heat helps the remaining steam finish the rice without overcooking the vegetables.
Texture tips
- Listen for the socarrat: A gentle crackle and nutty aroma are signs the base is crisping; remove it from the heat before it smells bitter.
- Add stock gradually: Keep the rice just submerged rather than flooded, topping up only as needed so the grains cook through without becoming waterlogged.
Ingredient notes
- Smoked paprika: Smoked paprika gives the rice its warm, savoury depth; sweet paprika can be used for a softer, less smoky result.
- Finish with lemon: Lemon cuts through the richness of the olive oil and saffron rice, making the vegetables taste brighter at the table.

Instructions
- Warm the vegetable stock in a saucepan until steaming, then crumble in the saffron and keep it hot over a low heat. Trim the green beans and cut them into bite-size lengths. Slice the onion, thinly slice the garlic, and cut the artichoke hearts and roasted peppers into generous pieces.
- Set a paella pan over a medium heat and add the olive oil. Cook the onion for 6 to 8 minutes until softened and lightly golden, then stir in the garlic and smoked paprika for 30 seconds until fragrant. Add the tomatoes and cook for 5 minutes, stirring, until slightly reduced and jammy.
- Stir in the bomba rice to coat it well in the tomato base. Pour in about three-quarters of the hot saffron stock and shake the pan to level the rice; from this point, do not stir. Simmer steadily for 10 minutes, topping up with more stock as needed to keep the rice just submerged.
- Nestle in the green beans, artichoke hearts and roasted peppers, then scatter over the peas. Continue to simmer for 8 to 12 minutes until the rice is just set with a little bite and the liquid is absorbed; add a splash more stock if the pan looks dry before the rice is ready. Increase the heat to medium-high for 1 to 2 minutes to encourage a lightly crisped base, watching closely so it does not burn.
- Remove from the heat and rest the paella for 5 minutes. Cut the lemon into wedges and serve alongside for squeezing over at the table.
Recipe notes
Tips
- For the best socarrat (the lightly crisped base), listen for a gentle crackle and smell a toasty aroma; stop as soon as it turns nutty, before it becomes bitter.
- Keep the stock hot while cooking so the paella returns to a steady simmer quickly after each top-up.
- If serving anyone who is vulnerable to foodborne illness, make sure the paella is served piping hot and the vegetables are fully tender.
Substitutions
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
- Replace Canned artichoke hearts with Frozen artichoke hearts, thawed, for a firmer texture.
- Replace Lemon with Lime for a sharper, more aromatic finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container for up to 3 days. Reheat in a frying pan with a splash of water or vegetable stock over a medium heat until piping hot, or in a 180°C (355°F) oven covered until hot throughout. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
