Modern Paella-Style Grain Bowl with Chicken and Prawns
Why this recipe works
- Layered Spanish flavours: Saffron, smoked paprika, tomato and stock season the rice and topping with warm, savoury depth.
- Clean finish: A squeeze of lemon lifts the chicken, prawns and rice so the bowl feels bright rather than heavy.
- Bowl-friendly format: Cooking the rice and topping separately keeps the method manageable while still delivering the familiar paella-style combination of rice, seafood, chicken and vegetables.

Authenticity notes
- Paella-style, not traditional paella: This version uses bomba rice, saffron and smoked paprika for recognisable Spanish flavour, but it is served as a grain bowl rather than cooked in a wide paella pan.
- Chicken and seafood combination: Chicken and prawns give the bowl a mixed-protein feel often associated with modern paella-inspired dishes.
Ingredient notes
- Use bomba rice if possible: Bomba rice is well suited to this dish because it absorbs stock and aromatics while staying more distinct than many standard short-grain rices.
- Smoked paprika matters: Smoked paprika gives the rice and vegetables a rounded, gently smoky flavour; sweet paprika makes the dish milder and less smoky.
- Bloom the saffron: Briefly steeping saffron in hot stock before adding it to the pan helps draw out more colour and aroma.
Common mistakes
- Boiling the rice too hard: Keep the rice at a gentle covered simmer so the grains have time to soften before the liquid evaporates.
- Overcooking the prawns: Add prawns near the end and cook only until pink and opaque; they can turn rubbery if left in the pan too long.
- Drying out lean chicken: If using chicken breast instead of thighs, cook it more carefully and avoid leaving it in the pan after it is done.
Make-ahead tips
- Good for short-term meal prep: Cool the bowl components quickly and refrigerate in a sealed container for up to 2 days.
- Reheat gently: Warm with a splash of water or stock over low heat, stirring until piping hot, and avoid prolonged cooking once the prawns are heated through.

Ingredients
Saffron rice
Chicken and prawns
Instructions
- Warm 1 tbsp olive oil in a saucepan over medium heat. Finely chop the onion, then cook it with a pinch of salt for 6 to 8 minutes until soft. Crush in the garlic and cook for 30 seconds until fragrant.
- Stir the bomba rice into the pan for 1 minute, then add the saffron and smoked paprika. Pour in the chicken stock and add the black pepper. Bring to the boil, then reduce to a gentle simmer, cover and cook for 18 to 20 minutes until the rice is tender and the liquid is absorbed.
- While the rice cooks, heat 1 tbsp olive oil in a large frying pan over medium-high heat. Season the chicken with a little salt, then cook for 6 to 8 minutes, turning, until golden and cooked through. Transfer to a plate.
- Slice the red pepper, add it to the pan and cook for 4 to 5 minutes until softened. Stir in the chopped tomatoes and simmer for 3 minutes to thicken slightly. Add the peas and cook for 2 minutes until hot.
- Add the prawns to the pan and cook for 2 to 3 minutes, tossing, until pink and just cooked. Return the chicken to the pan and warm through for 1 minute. Taste and adjust with a little more salt and pepper if needed.
- Fluff the saffron rice with a spoon and divide between two bowls. Spoon the chicken, prawns and vegetables over the top. Cut the lemon into wedges and squeeze over to finish.
Recipe notes
Tips
- Bloom the saffron in 2 tbsp of the hot chicken stock for 2 minutes before adding it to the rice for a fuller saffron flavour.
- Keep the rice at a gentle simmer with the lid on; if it boils hard, the liquid can reduce too quickly before the grains are tender.
- If serving to anyone vulnerable, make sure the prawns are cooked until fully pink and opaque all the way through.
Substitutions
- Replace chicken thighs with chicken breast for a leaner bowl; reduce the cooking time slightly to avoid drying it out.
- Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water or stock over low heat, stirring, until piping hot; avoid overcooking the prawns.
