Moroccan Chickpea and Quinoa Grain Bowl with Yoghurt Dressing

A Moroccan-inspired grain bowl brings together the satisfying structure of a cooked grain, spiced pulses, roasted vegetables and a cool dressing in one complete lunch. Here, fluffy quinoa forms the base for cumin-scented chickpeas and caramelised sweet potato, with cucumber adding freshness and crunch. The lemony yoghurt dressing softens the warmth of the spices, while mint gives the bowl a clean, herby lift. It is substantial without feeling heavy, easy to assemble ahead, and works well warm or at room temperature, especially when the dressing and crisp vegetables are added just before serving.

Why this recipe works

  • Warm and cool contrast: Roasted sweet potato and warm chickpeas are balanced by crisp cucumber, fresh mint and a cool yoghurt dressing.
  • Bright, creamy dressing: Lemon loosens and sharpens the yoghurt, cutting through the sweetness of the roasted potato and the earthiness of the quinoa.
  • Good for lunch prep: The cooked quinoa, chickpeas and sweet potato keep well, while the cucumber and dressing can be added just before serving.

Texture tips

  • Keep the bowl fresh: Store the dressing separately and spoon it over just before eating so the quinoa stays light rather than damp.
  • Dry the chickpeas well: Patting the chickpeas dry before roasting helps them heat through and lightly crisp instead of steaming.

Make-ahead tips

  • Separate the cool elements: Keep the cucumber, mint and yoghurt dressing apart from the cooked base until serving for the best texture.
  • Prep for several lunches: Cook the quinoa, sweet potato and chickpeas ahead, then reheat the warm components and finish with the fresh toppings.

Ingredient swaps

  • Use another grain: Bulgur makes a nuttier, more traditional-style grain base, while keeping the bowl quick and substantial.
  • Swap the herbs: Fresh parsley can replace mint for a softer, greener finish.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm cubes, then toss on a baking tray with 1 tbsp olive oil, 0.5 tsp salt and 0.25 tsp pepper.
  2. Roast for 20 to 25 minutes, turning once, until tender and browned at the edges. While it roasts, rinse the quinoa well in a colander under cold water.
  3. Cook the quinoa in a saucepan with 240 ml water and 0.25 tsp salt. Bring to the boil, cover, then simmer for 12 to 15 minutes until the water is absorbed; take off the heat and stand, covered, for 5 minutes.
  4. Drain and rinse the chickpeas, then pat dry. Toss with the remaining 1 tbsp olive oil, the cumin, and the remaining 0.5 tsp salt and 0.25 tsp pepper, then spread on the tray beside the sweet potato for the last 10 minutes of roasting until hot and lightly crisped.
  5. Make the dressing: in a bowl, whisk the yoghurt with the juice of the lemon and a pinch of salt until smooth and pourable. If it feels too thick, whisk in 1 to 2 tsp water from the tap until it loosens slightly.
  6. Cut the cucumber into bite-sized pieces and finely chop the mint leaves. Fluff the quinoa with a fork, then divide between bowls and top with the sweet potato, chickpeas, cucumber and mint.
  7. Spoon over the lemony yoghurt dressing and finish with a final grind of pepper. Serve warm or at room temperature.

  • Store the quinoa, sweet potato and chickpeas together in an airtight container, and keep the cucumber and dressing separate. Reheat the grain and toppings in the microwave until piping hot, then add the cucumber, mint and dressing just before serving.
