Shrimp and Grits with Bacon and Cheddar

Creamy grits topped with quickly cooked prawns is one of the most recognisable dishes of the American South, prized for the way it turns simple ingredients into a rich, savoury bowl. Here, stone-ground grits are simmered until tender, then finished with butter and cheddar for a smooth, spoonable base. Smoked streaky bacon gives the pan juices depth, while garlic, spring onion and lemon keep the prawns bright rather than heavy. Serve it straight away, with the glossy bacon-prawn mixture spooned over the grits so every bowl has creaminess, smoke, sharpness and a little fresh bite.

Why this recipe works

  • Creamy base: Stone-ground grits are cooked gently with milk and water, then finished with butter and cheddar for a smooth, rich texture.
  • Smoky depth: Bacon renders first, leaving savoury fat in the pan to flavour the garlic, spring onion and prawns.
  • Lifted pan juices: A squeeze of lemon loosens the browned bits in the pan and cuts through the richness of the grits and bacon.
  • Bowl-style comfort: The creamy grits and glossy prawn topping make a filling, spoonable dinner with a strong savoury backbone.

Timing notes

  • Serve straight away: The grits are at their best hot and freshly stirred, before they firm up as they cool.
  • Prep while the grits cook: Slice the spring onion, chop the garlic and cut the bacon while the grits simmer to keep the workflow efficient.

Texture tips

  • For looser grits: If the grits thicken too much before serving, stir in a splash of water until they become smooth and spoonable again.
  • Keep the prawns tender: Remove the pan from the heat as soon as the prawns turn pink and are just cooked through.

Ingredient notes

  • Use stone-ground grits: Stone-ground grits give the dish its characteristic body and gentle corn flavour; they need a slower simmer than instant versions.
  • Season after adding cheese and bacon: Cheddar and bacon both bring salt, so taste the finished grits before adding more seasoning.

Make-ahead tips

  • Store separately: If making ahead, refrigerate the grits and prawn mixture in separate containers so the prawns do not overcook during reheating.
  • Reheat gently: Warm the grits in a saucepan with a splash of water, stirring until smooth, then heat the prawns briefly just until piping hot.

  1. In a saucepan, bring the whole milk, water and fine sea salt to a gentle boil over medium heat. Whisk in the stone-ground grits in a steady stream. Reduce to low and cook, stirring often, for 25 to 30 minutes until thick and tender.
  2. While the grits cook, cut the streaky bacon into small pieces. In a large frying pan over medium heat, fry the bacon for 6 to 8 minutes until browned and the fat has rendered. Keep the heat moderate so it does not burn.
  3. Finely slice the spring onion and finely chop the garlic. Add the garlic and most of the spring onion to the bacon and cook for 30 to 60 seconds until fragrant. Keep a little spring onion back for serving.
  4. Add the prawns to the pan and sauté for 2 to 4 minutes, tossing, until pink and just cooked through. Squeeze in the lemon juice and scrape up any browned bits so the pan juices turn glossy. Remove from the heat.
  5. When the grits are tender, stir in the unsalted butter, cheddar cheese and black pepper until melted and creamy. If they seem too thick, loosen with a splash of water and stir well. Taste and adjust with a little more fine sea salt if needed.
  6. Spoon the grits into bowls and top with the bacon prawns and all the pan juices. Finish with the reserved spring onion and a final squeeze of lemon if you like. Serve straight away while hot and creamy.

Recipe notes

Tips

  • Whisk the grits in slowly as the liquid boils to prevent lumps, then switch to a wooden spoon and stir regularly so they do not catch on the base.
  • Keep the prawns moving in the pan and take them off as soon as they turn pink; overcooking makes them tough.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are cooked through and piping hot.

Substitutions

  • Replace Cheddar cheese with Gruyere cheese for a nuttier, more savoury finish.
  • Replace Whole milk with Half Whole milk and Half water for a lighter bowl.

Storage

  • Refrigerate up to 2 days
  • Cool and refrigerate the grits and the prawn mixture separately if possible. Reheat the grits gently in a saucepan with a splash of water, stirring until smooth and piping hot; warm the prawns briefly in a frying pan just until hot.
