Sweet Potato Gyro Bowl
Why this recipe works
- Gyro-style depth: Browning the lamb first builds savoury richness, then cumin, oregano and garlic add the familiar warm, herby flavour associated with gyro seasoning.
- Balanced textures: Roasted sweet potato, crumbly spiced lamb, crisp cucumber and onion, soft pitta and creamy yoghurt make the bowl feel complete rather than heavy.
- Fresh finish: Greek yoghurt and lemon cut through the richness of the lamb and the sweetness of the roasted potato, keeping each bite bright and balanced.

Ingredient notes
- Managing the lamb: Minced lamb brings natural richness; if it releases a lot of fat, spoon off the excess before adding the garlic and spices so the seasoning stays clear and aromatic.
- Slice the onion thinly: Thinly sliced red onion gives sharpness without overpowering the bowl. If preferred, let it sit briefly with lemon juice to soften its bite.
- Add lemon at the end: Finishing with lemon keeps the flavour fresh and lets each serving be adjusted to taste.
Make-ahead tips
- Keep hot and cold elements apart: Store the lamb and sweet potato together, but keep the salad vegetables, yoghurt, pitta and lemon separate so the bowl stays fresh when assembled.
- Reheat before assembling: Warm the lamb and sweet potato in a 180°C (355°F) oven until piping hot, then add the cold salad, yoghurt and lemon just before serving.
- Prep smartly: The lamb and sweet potato can be cooked ahead; for the best crunch, slice the cucumber and tomato closer to serving.
Common mistakes
- Crowding the sweet potato: Piling the sweet potato too tightly on the tray makes it steam rather than roast. Spread it out so the edges can brown.
- Scorching the garlic and spices: Add the garlic, cumin and oregano after the lamb has browned, then cook only briefly until fragrant to avoid bitterness.
- Assembling too early: Add the yoghurt, salad and pitta just before eating so the bowl keeps its contrast of warm, cool, soft and crisp textures.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Peel the sweet potato and cut into bite-size chunks, then toss on a baking tray with 1 tbsp of the extra virgin olive oil and 0.75 tsp of the fine sea salt.
- Roast the sweet potato for 25 to 30 minutes, turning once, until tender and browned at the edges. Meanwhile, slice the cucumber, dice the tomato, and thinly slice the red onion; put them in a bowl and set aside.
- Warm a large frying pan over medium-high heat with the remaining 1 tbsp extra virgin olive oil. Add the minced lamb and cook for 6 to 8 minutes, breaking it up, until browned and cooked through.
- Finely grate or crush the garlic into the pan, then stir in the ground cumin, dried oregano, remaining 0.5 tsp fine sea salt, and black pepper if using. Cook for 1 minute until fragrant, then take off the heat.
- Warm the pita bread in the oven for 2 to 3 minutes, or in a dry pan for 30 to 60 seconds per side, until soft and pliable. Cut or tear into bite-size pieces.
- Divide the roasted sweet potato, spiced lamb, salad vegetables, and pita between two bowls. Spoon over the Greek yogurt and finish with a generous squeeze of lemon.
Recipe notes
Tips
- For the best texture, spread the sweet potato out in a single layer so it roasts rather than steams.
- If you are serving children, keep the black pepper light and let everyone add extra lemon at the table.
Substitutions
- Replace Greek yogurt with yogurt for a looser, lighter topping.
- Replace dried oregano with fresh oregano for a brighter, more aromatic finish.
Storage
- Refrigerate up to 2 days
- Store the lamb and sweet potato together in an airtight container and keep the salad vegetables and Greek yogurt separate. Reheat the lamb and sweet potato in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, then assemble with fresh salad, pita and lemon.
