Turkish Celebration Table with Meze, Salad and Lamb Köfte

A Turkish celebration table is less a single dish than a generous way of eating: small bowls of meze, fresh salad, warm bread and a savoury grilled centrepiece arranged for sharing. Here, smooth cumin-scented hummus and cooling haydari provide the creamy elements, while tomato, cucumber, parsley, lemon and sumac bring sharpness and freshness. Lamb köfte adds warmth and substance, with its familiar mix of minced lamb, garlic, herbs and spice grilled until browned and juicy. Served with soft pita for scooping, the spread feels abundant without being fussy, making it well suited to relaxed dinners, festive gatherings or any meal where variety at the table is part of the pleasure.

Why this recipe works

  • Varied textures: Creamy dips, juicy grilled köfte, crisp salad and warm bread make the table feel balanced rather than heavy.
  • Layered flavour: Lemon, sumac, garlic, cumin and fresh herbs appear across the components, linking the dishes without making them taste the same.
  • Built for sharing: Serving everything together lets people build plates with bread, dips, salad and köfte in whatever balance they prefer.
  • Useful prep rhythm: The hummus and haydari benefit from chilling, leaving the köfte and bread to be grilled just before serving.

Timing notes

  • Let the haydari settle: Chilling the yoghurt dip for at least 30 minutes gives the garlic, dill and cucumber time to mellow and combine.
  • Rest the köfte briefly: A short rest after grilling helps the lamb settle before it is served on the platter.
  • Serve the bread last: Warm the pita just before bringing the table together so it stays soft, lightly toasted and easy to scoop.

Make-ahead tips

  • Make the dips in advance: The hummus and haydari can be prepared earlier in the day and kept chilled until the table is assembled.
  • Keep components separate: Store the dips, salad and köfte in separate containers so the salad stays fresh and the dips keep their texture.
  • Freeze cooked köfte: Cooked köfte can be frozen, then defrosted overnight and reheated in a 180°C (355°F) oven until piping hot.

Authenticity notes

  • Meze-style serving: The spread follows a familiar meze approach: several small dishes served together with bread, herbs and sharp, fresh seasoning.
  • Haydari variation: This version adds cucumber to the yoghurt dip for freshness; squeezing it well keeps the texture thick rather than watery.
  • Using sumac: Sumac brings a tart, citrus-like lift that works especially well with grilled lamb, tomato salad and olive oil.

Ingredient notes

  • Choose lamb with some fat: Minced lamb with a little fat helps the köfte stay juicy and brown well on the grill.
  • Squeeze the cucumber firmly: Removing excess liquid from the grated cucumber prevents the haydari from loosening as it chills.
  • Balance lemon and sumac: Taste the salad after it has rested briefly, then adjust the seasoning so the acidity feels bright but not harsh.

  1. For the hummus, drain and rinse the chickpeas. Crush 1 clove garlic with a pinch of the fine sea salt, then add to a food processor with the chickpeas, ground cumin, juice of 1 lemon, extra virgin olive oil and water. Blend until very smooth, scraping down as needed, then cover and chill while you prepare the rest.
  2. For the haydari, coarsely grate 1 cucumber, then squeeze out as much liquid as you can. Crush 1 clove garlic with a pinch of the fine sea salt, then stir into the greek yogurt with the cucumber, most of the fresh dill and the extra virgin olive oil. Chill for at least 30 minutes so the flavours settle.
  3. Make the salad: dice the tomatoes and the remaining cucumber, then tip into a bowl. Finely chop the fresh parsley and add it, then dress with juice of 1 lemon, extra virgin olive oil, sumac and fine sea salt. Set aside at room temperature for 10 minutes to lightly macerate.
  4. For the kofte, finely grate or crush 2 cloves garlic. Finely chop the fresh parsley, then mix it into the minced lamb with the garlic, ground cumin, sumac and fine sea salt until tacky. Shape into 12 short sausage shapes and brush lightly with extra virgin olive oil.
  5. Heat a grill to medium-high. Grill the kofte for 8 to 10 minutes, turning every couple of minutes, until browned all over and cooked through. Transfer to a plate and rest for 5 minutes.
  6. Warm the pita bread on the grill for 30 to 60 seconds per side until soft and lightly toasted. Spoon the hummus and haydari into bowls, drizzle each with a little extra virgin olive oil, and scatter over the remaining fresh dill. Arrange everything on a large platter with the salad, and finish with a final pinch of sumac over the table.

Recipe notes

Tips

  • For extra-smooth hummus, blend for a full 2 to 3 minutes and add a splash more water if it looks stiff; it should be creamy and spoonable.
  • When shaping kofte, keep a small bowl of water nearby to dampen your hands so the mixture does not stick.
  • If serving vulnerable groups, make sure the lamb is cooked through with no pink remaining in the centre.

Substitutions

  • Replace pita bread with naan bread for similarly soft, scoopable bread.
  • Replace greek yogurt with yogurt for a looser, lighter haydari.
  • Replace fresh dill with fresh parsley for a different herb profile in the haydari.

Storage

  • Refrigerate up to 3 days
  • Keep hummus, haydari and salad in separate airtight containers in the fridge. The salad is best within 24 hours; the dips keep well for up to 3 days. Freeze cooked kofte for up to 2 months, then defrost overnight and reheat in a 180°C (355°F) oven until piping hot.
