Estofado de Pollo Oaxaqueño (Oaxacan Chicken Stew with Olives and Raisins)
Why this recipe works
- Built-in depth: Browning the chicken first leaves savoury fond in the pot, giving the tomato sauce a fuller, more rounded flavour.
- Sweet-salty balance: Raisins soften into the sauce while green olives add briny sharpness, creating the distinctive contrast of Oaxacan-style estofado.
- Improves with resting: The stew holds well in the fridge, and the sauce becomes even more cohesive after the chicken has had time to absorb the seasoning.

Authenticity notes
- Oaxacan-style contrast: The combination of tomato, cinnamon, olives and raisins is what gives this stew its recognisable savoury-sweet profile.
- Serve with rice: Plain long-grain rice is a practical pairing because it absorbs the glossy sauce without competing with the olives and raisins.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes break down more readily and give the sauce better natural sweetness and acidity.
- Keep the cinnamon restrained: A small amount of ground cinnamon should warm the sauce rather than make it taste overtly sweet or dessert-like.
- Choose punchy olives: Green pitted olives bring the sharp, briny note that balances the raisins, so use ones with a clean, savoury flavour.
Common mistakes
- Avoid crowding the chicken: Give the thighs enough space when browning so they colour properly instead of steaming.
- Keep the simmer gentle: A steady, gentle simmer helps the chicken become tender while keeping the tomato sauce from reducing too aggressively.
- Watch the final sauce: Simmer uncovered only until glossy and slightly thickened; loosen with a splash of water if it becomes too concentrated.
Make-ahead tips
- Store stew and rice separately: Keeping the rice apart prevents it from absorbing too much sauce and turning soft during storage.
- Reheat gently: Warm the stew slowly with a splash of water until piping hot, stirring carefully so the tender chicken stays intact.
- Freeze the stew: The chicken stew can be frozen after cooking; freeze the rice separately or make a fresh batch for serving.

Ingredients
Instructions
- Finely chop the white onion and crush the garlic. Roughly chop the tomatoes.
- Heat the olive oil in a Dutch oven over medium-high heat. Season the chicken thighs with 1 tsp of the fine sea salt and the black pepper, then brown for 4 to 5 minutes per side until deeply golden; transfer to a plate.
- Lower the heat to medium and add the onion to the pot; cook for 6 to 8 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.
- Add the tomatoes, remaining 1 tsp fine sea salt, bay leaves and ground cinnamon. Cook for 8 to 10 minutes, stirring occasionally, until the tomatoes break down and the mixture looks saucy.
- Return the chicken to the pot and pour in 450 ml of the water. Bring to a gentle simmer, cover, and cook for 35 minutes, turning the chicken once, until tender and cooked through.
- Stir in the green pitted olives and raisin, then simmer uncovered for 8 to 10 minutes until the sauce is glossy and slightly thickened. Taste and adjust seasoning with a pinch more fine sea salt if needed, then discard the bay leaves.
- Meanwhile, rinse the long-grain white rice until the water runs clearer. Put it in a saucepan with the remaining 450 ml water, bring to the boil, then cover and cook on low for 12 minutes; rest off the heat for 5 minutes before fluffing.
- Serve the stew spooned over the rice, with plenty of sauce. If the sauce has thickened too much, loosen it with a splash of water and simmer for 1 minute.
Recipe notes
Tips
- For a cleaner sauce, crush the tomatoes well as they cook, then simmer uncovered at the end until it coats the back of a spoon.
- If cooking for pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken is piping hot all the way through before serving.
Substitutions
- Replace Chicken thighs with Chicken drumsticks for a similar slow-simmered texture; keep the cooking time the same and cook until tender.
- Replace Green pitted olives with Black pitted olives for a deeper, less sharp olive flavour.
- Replace Raisin with Sultana for a slightly lighter, honeyed sweetness.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate the stew and rice separately in sealed containers. Reheat the stew gently in a saucepan with a splash of water until piping hot; reheat rice in the microwave with a spoonful of water, covered, until steaming.
