Arroz de Cabrito (Portuguese Oven-Baked Goat Rice)
Why this recipe works
- Deep savoury base: Browning the goat first creates caramelised flavour in the pot, which is lifted by the wine and carried through the cooking liquid.
- Rice cooked in the broth: Adding the rice after the goat has simmered lets it absorb the seasoned stock and meat juices as it bakes.
- Tender, generous finish: Slow simmering followed by oven baking gives tender meat and rice with a rich, savoury character.

Authenticity notes
- Portuguese oven-baked rice style: This dish follows the Portuguese approach of cooking rice in a deeply flavoured meat broth, rather than serving the meat and rice separately.
- Best served generously: Bring it to the table hot from the pot or baking dish, with the parsley added at the end for freshness.
Ingredient notes
- Use bone-in goat: Bone-in pieces give the broth more body and savoury depth, which is important because the rice absorbs so much of the cooking liquid.
- Wine and tomato balance richness: Dry white wine and ripe tomato add acidity, helping to keep the finished rice from tasting too heavy.
Common mistakes
- Do not crowd the goat: Brown the pieces in batches so they colour properly rather than steam in the pot.
- Watch the rice as it bakes: If the rice looks dry before it is tender, add a small splash of hot stock and continue baking until absorbed.
- Let it rest covered: The covered resting time finishes steaming the rice and helps the texture settle before serving.
Make-ahead tips
- Freezes well: Cool quickly, portion into sealed containers and freeze for up to 2 months.
- Reheat gently with stock: Add a splash of chicken stock, cover, and reheat in a 180°C (355°F) oven until piping hot throughout.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Pat the goat dry, then season all over with the salt and pepper.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the goat in batches until well coloured, 3 to 4 minutes per side, then transfer to a plate.
- Reduce the heat to medium and add the onion with a pinch of the salt. Cook, stirring, for 6 to 8 minutes until softened and lightly golden.
- Add the garlic and cook for 1 minute until fragrant. Grate the tomatoes on the coarse side of a grater into the pot, discarding the skins, then cook for 4 to 5 minutes until the mixture thickens slightly.
- Pour in the white wine and bring to a lively simmer, scraping up any browned bits. Simmer for 3 to 4 minutes to cook off the raw alcohol.
- Return the goat to the pot and add the hot chicken stock and bay leaves. Bring to a gentle simmer, cover, and cook for 45 minutes until the meat is starting to turn tender.
- Stir in the rice, making sure it is mostly submerged, then taste the broth and adjust with a little more salt and pepper if needed. Cover and bake for 25 to 30 minutes until the rice is tender and most of the liquid is absorbed; if it looks dry before the rice is done, add a small splash of stock and continue baking.
- Rest the rice, covered, for 10 minutes so it finishes steaming. Finely chop the parsley, stir most through, then scatter the rest over the top and serve hot.
Recipe notes
Tips
- Brown the goat well; the caramelised bits on the pot are what give the rice its depth of flavour.
- Keep the stock hot when adding it so the pot returns to a simmer quickly and the meat cooks evenly.
- If serving vulnerable groups, ensure the goat is cooked until very tender and piping hot throughout before serving.
Substitutions
- Replace Dry White Wine with the same amount of Chicken stock for an alcohol-free version.
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat with a splash of chicken stock in a 180°C (355°F) oven, covered, for 15 to 20 minutes until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
