Sarma (Vine Leaves Stuffed with Lamb and Rice)
Why this recipe works
- Bright, balanced finish: Lemon and tomato passata cut through the richness of the lamb and keep the broth lively rather than heavy.
- Gentle simmering: Cooking the rolls slowly helps the rice absorb the savoury broth while keeping the vine leaves soft and intact.
- Good for preparing ahead: Sarma hold well with some cooking liquid, making them suitable for refrigerating or freezing in portions.

Authenticity notes
- Turkish-style sarma: In Turkish cooking, sarma refers to rolled leaves rather than a single filling, and vine leaves are one of the most recognisable versions.
- Serve with yoghurt: Plain yoghurt is a classic partner, adding coolness and creaminess against the lemony tomato broth.
Timing notes
- Rest before serving: Leaving the sarma covered off the heat helps the rolls settle, firm slightly and hold their shape when lifted from the pot.
- Best served warm: Serve warm rather than boiling hot so the flavour of the herbs, lemon and yoghurt comes through clearly.
Common mistakes
- Boiling too hard: A vigorous boil can tear the vine leaves and loosen the rolls; keep the liquid at a barely bubbling simmer.
- Rolling too tightly: The filling needs a little room to expand as the rice cooks, so roll firmly but not so tightly that the parcels become dense.
Make-ahead tips
- Reheat gently: Warm the sarma in a covered pot over low heat with a little extra liquid to keep the leaves moist and prevent sticking.
- Freeze with cooking liquid: Freeze cooked portions with some broth so the rolls stay tender when defrosted and reheated.

Ingredients
Instructions
- Rinse the grape leaves well, then soak them in a bowl of warm water for 10 minutes to remove excess brine. Drain and set aside. Rinse the rice under cold water until the water runs mostly clear, then drain.
- Finely chop the onion and roughly chop the dill and parsley. Heat 1 tbsp of the olive oil in a large pot over medium heat, then cook the onion with a pinch of the fine sea salt for 6 to 8 minutes until softened. Tip into a mixing bowl and let it cool for 2 minutes.
- Add the minced lamb, drained rice, ground cumin, sweet paprika, remaining fine sea salt, and the chopped herbs to the bowl. Mix thoroughly with your hands until evenly combined. If the mixture feels very stiff, add 1 to 2 tbsp of the water to loosen it slightly.
- Lay a grape leaf shiny-side down and place a heaped teaspoon of filling near the stem end. Fold in the sides and roll up snugly into a small cigar shape, keeping it tight but not so tight that the rice cannot expand. Repeat with the remaining leaves and filling.
- Wipe out the pot if needed, then drizzle in the remaining 2 tbsp olive oil. Arrange the sarma seam-side down in the pot in snug layers so they do not unravel. Pour over the tomato passata and the remaining water.
- Juice the lemon and stir the juice into the pot. Bring to a gentle simmer over medium heat, then reduce to low so the liquid barely bubbles. Cover and simmer for 70 to 80 minutes until the rice is tender and the rolls are plump, adding a splash of water if the pot looks dry.
- Rest the sarma off the heat, covered, for 10 minutes so they settle and firm up. Serve warm with some of the lemony tomato broth spooned over. Offer the yogurt alongside for spooning over each portion.
Recipe notes
Tips
- Keep the simmer very gentle; a hard boil can split the leaves and make the rolls unravel.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt.
Substitutions
- Replace fresh dill with extra fresh parsley for a milder, greener flavour.
- Replace sweet paprika with ground cumin for a warmer, more earthy profile.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with a little of the cooking liquid to keep the rolls moist. Reheat gently in a covered pot over low heat with a splash of water until piping hot. Freeze in portions with some liquid for up to 2 months; defrost overnight in the fridge before reheating.
