Gluten-Free Polenta with Mushroom Ragù
Why this recipe works
- Creamy base: Slow, gentle cooking lets the polenta thicken smoothly, while Parmesan gives it a richer finish.
- Deep savoury flavour: Browning the mushrooms before simmering concentrates their flavour and gives the ragù a more robust, meaty character.
- Satisfying contrast: The soft polenta and glossy mushroom ragù create a hearty bowl that feels generous without being heavy.

Texture tips
- Keep the polenta loose: If the polenta thickens too much before serving, stir in a little warm stock or water until it becomes soft and spoonable again.
- Whisk steadily at the start: Adding the polenta gradually while whisking helps prevent lumps and gives the finished dish a smoother texture.
Ingredient notes
- Choose flavourful mushrooms: Chestnut, portobello or mixed mushrooms bring more depth than very mild white mushrooms, especially in a meat-free ragù.
- Use fresh herbs if possible: Fresh rosemary gives the sauce a cleaner, more aromatic flavour; thyme is a good alternative for a gentler herb note.
Common mistakes
- Cooking the polenta too hot: High heat can make polenta catch on the bottom of the pan, so keep it low and stir often once it starts to thicken.
- Crowding the mushrooms: If the pan is too full, the mushrooms steam rather than brown. Let them sit undisturbed in the pan so their flavour can concentrate.
Make-ahead tips
- Store separately if possible: Keep the polenta and ragù in separate containers so each can be reheated to the right texture.
- Reheat gently: Warm the polenta slowly with a splash of water or stock, stirring often, and heat the ragù until piping hot before serving.

Instructions
- Bring the vegetable stock to a gentle boil in a saucepan. Whisk in the polenta in a steady stream, then reduce to low and cook, stirring often, for 25 to 30 minutes until thick and creamy. Stir in the fine sea salt, Parmesan and black pepper, then cover and keep warm on the lowest heat.
- Meanwhile, heat the extra virgin olive oil in a large frying pan over medium heat. Finely chop the yellow onion and cook for 6 to 8 minutes until soft and lightly golden. Crush the garlic and cook for 30 seconds, just until fragrant.
- Strip and finely chop the fresh rosemary leaves, then add to the pan. Slice the mushrooms and cook for 10 to 12 minutes, stirring occasionally, until they release their liquid and start to brown. Season lightly with a pinch of the fine sea salt if needed.
- Stir in the tomato purée and cook for 1 minute. Add a splash of the vegetable stock from the saucepan and simmer for 6 to 8 minutes until the ragù is glossy and spoonable. Taste and adjust with black pepper.
- Spoon the polenta into warm bowls and top with the mushroom ragù. Finish with a little extra black pepper if you like. Serve straight away while the polenta is creamy.

Tips
- For the best texture, whisk the polenta in slowly and keep the heat low so it cooks gently without catching.
- Let the mushrooms sit undisturbed for a couple of minutes at a time so they brown properly, which makes the ragù taste deeper.
- If serving anyone vulnerable to foodborne illness, make sure the dish is served piping hot and cooled quickly before storing.
Substitutions
- Replace Parmesan with Grana Padano cheese for a similar salty finish.
- Replace Fresh rosemary with fresh thyme for a softer, more rounded herb note.
- Replace Vegetable stock with mushroom broth for an even more savoury base.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in airtight containers. Reheat the ragù in a saucepan over medium-low heat until piping hot; loosen the polenta with a splash of water or vegetable stock and warm gently, stirring often. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
