Polenta con Ragù di Salsiccia (Creamy Polenta with Sausage Ragù)
Why this recipe works
- Deep savoury base: Slowly softened onion, celery and carrot give the ragù sweetness before the sausage, rosemary, wine and passata build richness.
- Creamy polenta: Whisking the polenta regularly and finishing it with Parmesan gives it a smooth, spoonable texture that carries the sauce well.
- Hearty but balanced: The soft polenta mellows the robust sausage ragù, creating a satisfying dinner without needing a long simmer.

Timing notes
- Efficient workflow: Start the ragù first, then cook the polenta while the sauce simmers so both components are ready together.
- Serve the polenta promptly: Polenta thickens as it stands, so spoon it into bowls soon after stirring in the cheese.
Texture tips
- For smoother polenta: Whisk the polenta into the boiling water in a steady stream to reduce lumps from the start.
- Loosen if needed: If the polenta becomes too thick before serving, whisk in a little hot water until it returns to a creamy consistency.
- Keep the heat gentle: Once the polenta is added, cook it over a low heat and whisk often so the grains hydrate evenly.
Ingredient notes
- Sausage choice matters: Italian pork sausage brings seasoning, fat and depth to the ragù; remove it from the casing if needed so it can be crumbled finely.
- Use a good grating cheese: Parmigiano Reggiano gives the polenta a nutty, savoury finish, while Pecorino Romano makes the dish sharper and saltier.
- Reduce the wine properly: Let the wine simmer down before adding the passata so the ragù tastes rounded rather than sharp.
Make-ahead tips
- Store separately: Keep the ragù and polenta in separate airtight containers so the sauce stays rich and the polenta can be loosened properly when reheated.
- Reheat gently: Warm the ragù until piping hot and reheat the polenta with a splash of water, stirring until creamy again.
- Best component to freeze: The ragù freezes better than the polenta; freeze it separately and make fresh polenta when possible for the best texture.

Ingredients
Instructions
- Finely chop the onion, celery and carrot. Crush the garlic, and strip the rosemary leaves from the sprig.
- Heat the olive oil in a large frying pan over a medium heat. Add the onion, celery and carrot with a pinch of the salt and cook for 8 to 10 minutes, stirring, until softened and sweet.
- Add the garlic and rosemary and cook for 1 minute until fragrant. Crumble in the sausage meat and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining.
- Pour in the red wine and simmer for 2 to 3 minutes, scraping up any browned bits, until reduced by about half. Stir in the passata, then simmer gently for 12 to 15 minutes until rich and glossy; season with the remaining salt and the black pepper.
- Meanwhile, bring 800 ml water to the boil in a saucepan and whisk in the polenta in a steady stream. Reduce to a low heat and cook for 10 to 12 minutes, whisking often, until thick and creamy.
- Take the polenta off the heat and stir in half the parmesan until melted and smooth. Spoon into bowls, top with the sausage ragù, and finish with the remaining parmesan.
Recipe notes
Tips
- Keep the ragù at a gentle simmer so it reduces without catching; if it thickens too quickly, loosen with a splash of water.
- For extra creaminess, whisk the polenta vigorously for the last minute to knock out any lumps before serving.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the sausage is cooked through and the ragù is piping hot.
Substitutions
- Replace Fresh rosemary with Fresh thyme for a softer, more floral herb note.
- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier finish.
- Replace Red wine with Dry white wine for a lighter, brighter ragù.
Storage
- Refrigerate up to 3 days
- Cool the ragù and polenta separately, then refrigerate in airtight containers. Reheat the ragù in a saucepan over a low heat until piping hot; reheat the polenta with a splash of water, stirring until creamy again. Freeze the ragù for up to 2 months; the polenta can be frozen but may need extra stirring and water when reheating.
