Vietnamese Prawn Vermicelli Noodle Salad Bowl
Why this recipe works
- Bright, balanced dressing: Lime, fish sauce, sugar, garlic and chilli create the sweet-sour-salty balance that defines a good nước chấm.
- Fresh texture contrast: Springy noodles, tender prawns, crisp vegetables, crunchy peanuts and soft herbs keep each bite lively.
- Fast assembly: The noodles and prawns cook quickly, while the vegetables and dressing can be prepared as they drain.

Adjust the heat
- For less heat: Reduce the chilli powder or replace it with a small amount of mild hot sauce, then adjust at the table.
- For more heat: Add extra chilli to the dressing or serve sliced fresh chilli alongside so each bowl can be seasoned individually.
Ingredient notes
- Choose thin rice vermicelli: Fine rice vermicelli suits this style of salad because it cools quickly and absorbs the dressing without becoming heavy.
- Use fresh herbs generously: Mint and coriander are central to the freshness of the bowl; dried herbs will not give the same lift.
- Use good fish sauce: Fish sauce is the backbone of the dressing, so a clean, savoury-tasting bottle makes a noticeable difference.
Make-ahead tips
- Keep components separate: Store the noodles, prawns, vegetables, herbs and dressing separately in the fridge, then assemble just before serving.
- Prep the vegetables early: The cucumber, carrot and herbs can be prepared ahead, but keep the herbs covered and chilled so they stay fresh.
- Best eaten fresh: This salad is at its best on the day it is made, before the noodles soften and the vegetables release moisture.
Common mistakes
- Do not overcook the prawns: Remove them as soon as they turn pink and are just cooked through; overcooked prawns become firm and rubbery.
- Drain thoroughly: Excess water from the noodles or prawns will dilute the dressing and make the salad feel watery.
- Dress at the last moment: Spoon over the nước chấm just before serving to keep the vegetables crisp and the herbs bright.

Ingredients
Instructions
- Bring a large pot of water to the boil. Cook the rice vermicelli according to the packet instructions until tender, then drain in a colander and rinse well under cold water to cool. Shake off excess water and set aside.
- Bring the same pot of water back to a gentle boil. Add the prawns and cook for 2–3 minutes until pink and just cooked through, then drain and rinse briefly under cold water. Set aside to drain well.
- Make the nước chấm: finely grate the garlic into a bowl, then whisk in the fish sauce, the juice of the lime, caster sugar and hot chili powder. Whisk until the sugar dissolves, then taste and adjust with a little more lime juice if you want it sharper.
- Cut the cucumber into thin matchsticks and coarsely grate the carrot. Roughly chop the fresh mint and fresh coriander. Crush the roasted peanuts with the flat of a knife or in a bowl.
- Divide the noodles between two bowls and top with the prawns, cucumber, carrot and mung bean sprouts. Spoon over the dressing, then scatter over the herbs and peanuts. Toss gently at the table and serve straight away.
Recipe notes
Tips
- Rinse the noodles thoroughly after draining so they stay springy and do not clump.
- For the best texture, drain the prawns well before assembling so the salad stays crisp rather than watery.
- If serving to anyone sensitive to raw garlic, briefly blanch the peeled garlic clove in boiling water for 30 seconds, then grate it into the dressing.
Substitutions
- Replace hot chili powder with a smaller amount of hot sauce for a cleaner, sharper heat.
- Replace roasted peanuts with cashew nuts for a similar crunch and richness.
- Replace fresh mint with extra fresh coriander for a more herb-forward bowl.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you need to prep ahead, keep the noodles, vegetables, prawns and dressing separate in the fridge, then assemble just before serving; toss with dressing at the last moment.
