Brazilian Chicken Stroganoff (Creamy Tomato Sauce)
Why this recipe works
- Built-in savoury depth: Browning the mushrooms and chicken before adding the sauce gives the dish more depth than simply simmering everything together.
- Cream balanced by tang: Tomato purée and Dijon mustard cut through the richness of the double cream, keeping the sauce bright rather than heavy.
- Glossy, coating sauce: Reducing the heat before adding the cream helps the sauce thicken gently and cling to the chicken.

Authenticity notes
- Brazilian-style stroganoff: Brazilian versions are commonly creamier and more tomato-led than sour-cream-based stroganoffs, with a mild, rounded sauce designed for serving with rice.
- Serve with rice: Long-grain white rice is a natural pairing because it absorbs the sauce without making the meal feel too rich.
Ingredient notes
- Mushroom choice: Cremini mushrooms bring a deeper savoury flavour, while button mushrooms make the sauce slightly milder.
- Use a rich cream: Double cream gives the sauce its smooth texture and is less likely to split than lower-fat alternatives when heated gently.
- Balance before serving: The tomato purée and mustard provide tang, so taste after the cream has been added before adjusting the final seasoning.
Common mistakes
- Avoid a crowded pan: If the mushrooms and chicken are packed too tightly, they release moisture and stew instead of taking on light colour.
- Do not boil the cream: Once the double cream is added, keep the heat low and simmer gently to maintain a smooth sauce.
- Loosen gently if needed: If the sauce thickens too much during reheating, add a little water gradually and warm it slowly.
Make-ahead tips
- Prep ahead: The onion, garlic, mushrooms and chicken can be prepared in advance and kept separately so they cook evenly when needed.
- Reheat gently: Warm the stroganoff over a low heat until piping hot, stirring occasionally and avoiding a hard boil.
- Cook rice fresh if possible: The stroganoff keeps well in the fridge, but the rice has the best texture when freshly steamed.

Instructions
- Rinse the rice until the water runs mostly clear. Tip into a saucepan with the water and 1 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to steam while you make the stroganoff.
- Meanwhile, finely chop the onion and crush the garlic. Slice the mushrooms and cut the chicken into bite-size pieces. Keep everything separate so it cooks evenly.
- Heat the sunflower oil in a large frying pan over a medium-high heat. Add the onion with a pinch of the remaining salt and cook for 4 to 5 minutes until softened and lightly golden. Stir in the garlic for 30 seconds until fragrant.
- Add the mushrooms and cook for 5 to 6 minutes, stirring occasionally, until they release their liquid and start to brown. Add the chicken, season with the black pepper and the remaining salt, and cook for 5 to 7 minutes until the chicken is opaque and lightly coloured. Keep the heat fairly high so the pan stays lively rather than stewing.
- Stir in the tomato purée and cook for 1 minute to take the raw edge off. Add the Dijon mustard, then reduce the heat to low and stir in the double cream. Simmer gently for 3 to 4 minutes until glossy and thick enough to coat the chicken, without letting it boil.
- Fluff the rice with a fork. Serve the chicken stroganoff hot over the rice, spooning plenty of sauce on top. Taste and adjust seasoning with a little more salt and pepper if needed.
Recipe notes
Tips
- For the best texture, keep the pan hot when browning the mushrooms and chicken so they colour rather than release too much liquid.
- Once the double cream is added, keep the heat low and avoid boiling to prevent the sauce splitting.
Substitutions
- Replace Chicken breast with Chicken thighs boneless skinless for a juicier result; cook for an extra 2 to 3 minutes if needed until cooked through.
- Replace Cremini mushrooms with Button mushrooms for a milder flavour.
- Replace Dijon mustard with Whole-grain mustard for a coarser texture and gentler heat.
Storage
- Refrigerate up to 3 days
- Cool the stroganoff quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a frying pan over a low heat until piping hot, adding a splash of water to loosen if needed; avoid boiling. Rice is best cooked fresh, but leftovers can be chilled for up to 2 days and reheated until piping hot.
