Chè Ba Màu (Vietnamese Three-Colour Dessert)
Why this recipe works
- Distinct layers: Soft mung beans, firmer red beans, bouncy pandan jelly and crushed ice create the layered texture that defines the dessert.
- Served cold: Chilling each component and adding ice at the end keeps the dessert light, cool and clean-tasting.
- Easy to prepare in stages: The beans, jelly and coconut milk can be prepared separately, then assembled quickly when ready to serve.

Timing notes
- Chill before assembling: Cold components help the layers stay separate and stop the jelly from softening too quickly.
- Serve straight away: Add the crushed ice and coconut milk only at the end, as melted ice will blur the layers and dilute the coconut topping.
Ingredient notes
- Agar-agar sets the jelly: Agar gives the pandan layer a firm, clean bite that holds its shape well when cut into cubes.
- Use cooked beans with structure: The mung beans should be tender but not collapsing, while the kidney beans should be well drained so the layers remain neat.
- Coconut milk adds richness: A smooth, well-whisked coconut milk gives the final layer its creamy finish and balances the sweetness of the beans.
Make-ahead tips
- Keep components separate: Store the mung beans, red kidney beans, pandan jelly and coconut milk separately in the fridge until needed.
- Layer close to serving: The beans and jelly can be layered ahead, but wait to add crushed ice and coconut milk until just before eating.

Instructions
- Rinse the mung beans in a sieve, then tip into a saucepan and cover with plenty of boiling water. Simmer for 18 to 22 minutes until tender but not falling apart, topping up with hot water if needed. Drain well, return to the pan, then stir in 40 g of the caster sugar and a pinch of the fine sea salt; set aside to cool.
- Rinse the red kidney beans under cold water, then drain thoroughly. In a bowl, mix the beans with 40 g of the caster sugar and the vanilla extract. Chill while you make the jelly so the layers stay distinct.
- In a saucepan, whisk the dried agar-agar with 400 ml water and the remaining 60 g caster sugar until no lumps remain. Bring to the boil, then simmer for 2 minutes, whisking, until fully dissolved. Stir in the pandan extract, then pour into a shallow dish and leave to cool, then chill until set.
- Once set, cut the pandan jelly into small cubes. Keep it chilled until serving so it stays firm and the colour stays bright.
- For the coconut topping, whisk the coconut milk with a pinch of fine sea salt until smooth. Chill until cold; if it separates, whisk again just before serving.
- To assemble, spoon a layer of sweet mung beans into each glass, then add a layer of sweet red kidney beans, then a layer of pandan jelly. Crush the ice cubes (or pulse briefly) and mound it on top. Finish with a generous pour of chilled coconut milk and serve straight away with long spoons.
Recipe notes
Tips
- Keep each component well chilled before assembling so the layers stay clean and the jelly does not soften.
- If you are serving later, layer the beans and jelly in the glasses and keep them chilled, then add the crushed ice and coconut milk at the last moment.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use pasteurised coconut milk and ensure the beans are fully cooked and cooled quickly before chilling.
Substitutions
- Replace caster sugar with coconut sugar for a deeper caramel note and a slightly darker colour.
- Replace pandan extract with vanilla extract for a non-traditional but pleasant, creamy flavour (the dessert will lose its green layer).
Storage
- Refrigerate up to 2 days
- Store the mung beans, red kidney beans, pandan jelly, and coconut milk separately in the fridge for up to 2 days. Assemble just before serving; once ice is added, it will melt and blur the layers.
