Holiday Bun Cha
Why this recipe works
- Layered savoury flavour: Fish sauce, sugar, garlic and shallot season the pork deeply before grilling, giving the meatballs and pork belly a savoury-sweet caramelised finish.
- Bright dipping sauce: Lime juice and rice vinegar cut through the richness of the pork, while sugar rounds out the sharpness of the nước chấm.
- Fresh contrast: Cool herbs, lettuce and rice vermicelli keep the dish light against the charred pork and warm sauce.

Adjust the heat
- For less heat: Use less sliced chilli in the nước chấm, or serve it separately so each person can add their own.
- For extra heat: Add more fresh chilli to the sauce just before serving, keeping the flavour fresh rather than cooked down.
- Keep the sauce balanced: If the chilli makes the sauce feel too sharp, adjust with a little extra sweetness or lime to bring it back into balance.
Authenticity notes
- Grilled pork is central: Bún chả is defined by grilled pork served with noodles, herbs and dipping sauce; good caramelisation is more important than a heavy sauce.
- Herbs and lettuce matter: Fresh mint, coriander and soft lettuce are not just garnish here — they add fragrance, freshness and the wrapping element that makes the dish distinctive.
- Serve as components: Keeping the pork, noodles, herbs and nước chấm separate at the table lets each serving be dipped, wrapped or mixed to taste.
Common mistakes
- Not mixing the mince enough: The minced pork should feel tacky before shaping; this helps the meatballs hold together and stay juicy as they grill.
- Letting the glaze catch too hard: The sugar in the marinade encourages caramelisation, so turn the pork often and move pieces away from fierce heat if they darken too quickly.
- Boiling the nước chấm: Warm the sauce only until the sugar dissolves. Boiling can dull the lime and vinegar flavours.
Make-ahead tips
- Prepare components ahead: The pork can be marinated and the herbs washed ahead of time, but keep the lettuce and herbs dry until serving.
- Store separately: Keep cooked pork, nước chấm, noodles and fresh herbs in separate containers so the herbs stay crisp and the noodles do not absorb too much sauce.
- Reheat the pork well: Warm the pork in a hot frying pan until piping hot, then serve with freshly cooked or refreshed vermicelli for the best texture.

Instructions
- Finely grate the garlic and finely chop the shallot. In a bowl, mix half the garlic and half the shallot with 20 g of the caster sugar and 60 ml of the fish sauce.
- Add the minced pork to the bowl and mix until tacky, then shape into 16 small meatballs. Add the pork belly to the same bowl and turn to coat; leave both to marinate for 15 minutes while you prepare the rest.
- For the nước chấm, combine the rice vinegar, juice of both limes, remaining fish sauce, remaining caster sugar, and the remaining garlic and shallot in a small saucepan. Warm gently for 2 to 3 minutes, stirring just until the sugar dissolves, then take off the heat.
- Bring a saucepan of water to the boil and cook the rice vermicelli until tender. Drain well and rinse briefly under cold water, then set aside to drain again.
- Heat the grill to a high heat; if you do not have a grill, use a large frying pan over a medium-high heat. Grill the pork belly and meatballs for 8 to 12 minutes, turning often, until caramelised and cooked through.
- Thinly slice the red chili pepper and stir it into the warm nước chấm. Separate the butterhead lettuce into leaves, then pick the fresh mint and fresh coriander into a bowl.
- Divide the rice vermicelli between bowls, then add the grilled pork. Serve with lettuce and herbs for wrapping and plenty of warm nước chấm for dipping.
Recipe notes
Tips
- Mixing the minced pork until it feels sticky helps the meatballs hold together and stay juicy on the grill.
- Keep the nước chấm warm rather than boiling; heating it just enough to dissolve the sugar keeps the flavour bright.
- If serving anyone vulnerable, make sure the pork is cooked through and piping hot before serving.
Substitutions
- Replace Rice vinegar with a smaller amount of White vinegar for a sharper nước chấm; add it gradually and taste as you go.
- Replace Pork belly with Minced pork formed into a few larger patties if you want all meatball-style grilling.
Storage
- Refrigerate up to 2 days
- Store cooked pork and nước chấm separately in the fridge; keep herbs and lettuce separate and dry. Reheat the pork in a hot frying pan until piping hot, and warm the sauce gently, then serve with freshly cooked vermicelli for the best result.
