Polenta e Spezzatino di Manzo (Beef Stew with Polenta)
Why this recipe works
- Layered savoury depth: Browning the beef, softening the soffritto and reducing the wine before simmering all build a deeper, rounder sauce.
- Creamy base: Butter and Parmesan give the polenta a glossy, smooth finish that balances the robust beef stew.
- Hearty and satisfying: Tender braised beef and soft polenta make the dish warming, filling and well suited to relaxed cold-weather cooking.

Timing notes
- Mostly hands-off: Once the beef is browned and the sauce is simmering, the recipe needs only occasional stirring until the meat turns tender.
- Serve polenta promptly: Polenta firms as it stands, so finish it close to serving time or keep it warm over very low heat and loosen as needed.
Common mistakes
- Do not crowd the beef: Brown the beef in batches so it colours properly rather than steaming in its own juices.
- Keep the braise gentle: A steady, low simmer helps the beef become tender without drying out or reducing the sauce too aggressively.
- Adjust the sauce at the end: Reduce uncovered if the stew is too loose, or loosen with a little stock if it has thickened too much.
Make-ahead tips
- Make the stew ahead: The beef stew can be cooked in advance and refrigerated, then reheated gently on the hob before serving.
- Freeze the stew separately: Freeze the braised beef and sauce without the polenta for the best texture when reheated.
- Reheat gently: Warm the stew slowly with a splash of stock if needed, and refresh leftover polenta with a little water and butter.
Ingredient notes
- Choose braising beef: Use beef suited to slow cooking, as tougher cuts become tender and flavourful during the long simmer.
- Use a dry wine: A dry red wine keeps the sauce savoury and structured; dry white wine gives a lighter, brighter result.
- Polenta consistency matters: Stir the polenta often as it cooks so it thickens evenly and stays creamy rather than setting too firmly before serving.

Instructions
- Finely chop the onion, carrot and celery. Pat the beef dry and season it with 1 tsp of the fine sea salt and all the black pepper.
- Heat the extra virgin olive oil in a Dutch oven over medium-high heat. Brown the beef in batches for 6 to 8 minutes total, turning until well coloured, then transfer to a plate.
- Lower the heat to medium and add the onion, carrot and celery to the pot. Cook for 8 to 10 minutes, stirring, until softened and lightly golden; stir in the remaining 1 tsp fine sea salt.
- Pour in the dry red wine and bring to a lively simmer, scraping up any browned bits. Simmer for 5 to 7 minutes until reduced by about half.
- Return the beef to the pot, then add the tomato passata, beef stock and bay leaves. Bring to a gentle simmer, cover slightly ajar, and cook for 75 to 85 minutes, stirring occasionally, until the beef is very tender and the sauce is rich.
- When the stew has about 25 minutes left, bring 1 litre water to the boil in a saucepan and whisk in the polenta in a steady stream. Cook over low heat for 20 to 25 minutes, stirring often, until thick and creamy.
- Off the heat, stir the unsalted butter and parmesan into the polenta until glossy. Remove the bay leaves from the stew, then taste and adjust seasoning if needed.
- Spoon the polenta into bowls and ladle the beef stew and sauce over the top. Serve straight away while the polenta is soft and the stew is piping hot.
Recipe notes
Tips
- For the best texture, keep the stew at a gentle simmer rather than a rapid boil; the beef should become spoon-tender without the sauce drying out.
- If the sauce is thinner than you like at the end, simmer uncovered for 5 to 10 minutes to reduce; if it is too thick, loosen with a splash of beef stock.
- Polenta thickens quickly as it stands, so serve promptly or keep it warm over very low heat with a little extra water stirred in.
Substitutions
- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier finish.
- Replace Dry Red Wine with Dry White Wine for a lighter, brighter braise.
Storage
- Refrigerate up to 3 days
- Cool the stew quickly, then refrigerate in a sealed container for up to 3 days or freeze for up to 3 months. Reheat the stew gently on the hob with a splash of beef stock until piping hot; make the polenta fresh, or reheat it with a little water and a knob of unsalted butter, stirring until creamy.
