Lasagna delle Feste (Festive Lasagne with Meat Ragù and Béchamel)
Why this recipe works
- Deep ragù flavour: Browning the beef, reducing the wine and simmering the passata slowly gives the sauce a rich, savoury base.
- Creamy, structured layers: Béchamel adds softness and moisture while helping the pasta layers bind neatly as the lasagne bakes.
- Built for sharing: The layered bake can be assembled in one dish, portioned easily after resting and served as a substantial main course.

Timing notes
- Let it settle before slicing: Resting the lasagne for 15 minutes allows the sauce and pasta to firm up slightly, giving cleaner portions.
- Most of the time is hands-off: The active work is mainly chopping, browning, whisking and assembling; the depth comes from the slow ragù simmer and oven bake.
Authenticity notes
- Béchamel-style lasagne: Meat ragù layered with béchamel is a classic Italian approach, especially associated with northern and Emilian-style lasagne.
- Cheese finish: Mozzarella gives a softer, melting top, while extra Parmigiano Reggiano creates a sharper and drier golden crust.
Common mistakes
- Using ragù that is too loose: A watery ragù can make the layers slide apart. Simmer until the sauce is thick and glossy before assembling.
- Rushing the béchamel: Whisk the milk in gradually so the sauce stays smooth rather than lumpy.
- Cutting too soon: Slicing straight from the oven makes the layers collapse; a short rest gives a much neater result.
Make-ahead tips
- Assemble in advance: The lasagne can be assembled ahead, covered and refrigerated before baking, making it practical for entertaining.
- Freeze cooked portions: Cool completely, wrap portions well and freeze for later meals.
- Reheat gently: Defrost overnight in the fridge, then reheat in a 180°C (355°F) oven until piping hot throughout.

Instructions
- Heat the olive oil and 20 g of the butter in a Dutch oven over medium heat. Finely chop the onion, celery and carrot, then cook with a pinch of the salt for 8 to 10 minutes until soft and sweet. Add the garlic and cook for 1 minute until fragrant.
- Add the minced beef and raise the heat to medium-high. Cook for 8 to 10 minutes, breaking it up, until well browned and any liquid has evaporated. Season with the remaining salt and the pepper.
- Pour in the red wine and simmer for 3 to 5 minutes, scraping up any browned bits, until reduced by about half. Stir in the passata, bring to a gentle simmer, then partially cover and cook on low for 60 minutes, stirring occasionally, until thick and rich. Taste and adjust with a little more salt or pepper if needed.
- While the ragù simmers, make the béchamel: melt 60 g butter in a saucepan over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly, until it smells lightly biscuity. Gradually whisk in the milk, then cook for 6 to 8 minutes until smooth and thick enough to coat the back of a spoon; season with the salt and pepper.
- Heat the oven to 190°C (375°F). Grate the parmesan and tear the mozzarella into small pieces. If your lasagne sheets require pre-cooking, boil them according to the packet instructions, then drain well.
- Assemble the lasagne in a baking dish: spread a thin layer of ragù on the base, then add a layer of lasagne sheets. Spoon over ragù, drizzle béchamel, and scatter a little parmesan and mozzarella; repeat for 3 to 4 layers, finishing with béchamel and the remaining cheeses. Bake for 30 to 35 minutes until bubbling and deeply golden on top.
- Rest the lasagne for 15 minutes before slicing so the layers set. Serve hot, spooning any sauce from the edges over each portion.
Recipe notes
Tips
- For a neater slice, let the ragù simmer until it is thick enough that a spoon leaves a brief trail on the surface before it fills in.
- If the top is browning too quickly before the centre is piping hot, cover loosely with foil for the final 10 minutes of baking, then uncover to finish colouring.
Substitutions
- Replace Dry Red Wine with dry white wine for a lighter, slightly fruitier ragù.
- Replace Mozzarella with Parmesan for a sharper, drier finish on top.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Freeze portions well wrapped for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot throughout.
