Chicken Tagine with Preserved Lemon

Chicken tagine with preserved lemon brings together the defining qualities of Moroccan-style braising: tender bone-in chicken, softly cooked onions, warm spices and a savoury sauce that gathers flavour as it simmers. The preserved lemon peel gives the dish its unmistakable brightness, while green olives add briny depth against the gentle warmth of cumin, coriander, ginger and saffron. Traditionally served from a tagine but equally practical in a Dutch oven, it is a generous dinner dish best spooned over couscous so the fragrant juices are not lost.

Why this recipe works

  • Layered aromatics: Cooking the onion, garlic, ginger, spices and saffron before adding liquid gives the braise a fragrant base.
  • Bright, savoury balance: Preserved lemon and green olives lift the rich chicken juices with salty citrus and briny depth.
  • Tender, saucy finish: Slow-braised chicken thighs become tender while creating plenty of aromatic sauce for the couscous.

Authenticity notes

  • Preserved lemon and olives: This salty citrus-and-brine combination is central to many Moroccan chicken tagines and gives the sauce its recognisable savoury brightness.
  • Gentle covered braise: Cooking in a tagine or Dutch oven lets the onions, spices and chicken juices form the sauce without heavy thickening.

Ingredient notes

  • Use the preserved lemon peel: The peel brings the clean citrus flavour; discarding the pulp keeps the finish lighter and less salty.
  • Let saffron stay subtle: Saffron should add gentle colour and perfume rather than overpowering the cumin, coriander and ginger.
  • Choose bone-in thighs: Bone-in, skin-on thighs suit slow braising because they stay succulent and add body to the sauce.

Common mistakes

  • Boiling too hard: A vigorous boil can tighten the chicken and make the sauce look greasy; keep the braise low and steady.
  • Adding lemon too early: Preserved lemon is best added near the end so its bright citrus edge stays clear rather than becoming muted.

Make-ahead tips

  • Good for making ahead: The chicken and sauce can be cooked ahead; the spices and preserved lemon settle into the braise as it chills.
  • Reheat gently: Warm the chicken and sauce slowly on the hob with a little water if needed, keeping the sauce at a quiet simmer.
  • Freeze without couscous: Freeze the chicken and sauce separately from the couscous, then defrost overnight in the fridge before reheating.

Instructions

  1. Thinly slice the onion, finely grate the garlic and ginger, and roughly chop the coriander. Pat the chicken thighs dry.
  2. Warm the olive oil in a tagine base (or a Dutch oven) over medium heat. Add the onion and cook for 8 to 10 minutes until softened and lightly golden.
  3. Stir in the garlic, ginger, ground cumin, ground coriander and saffron, and cook for 1 minute until fragrant. Nestle in the chicken thighs, turning to coat in the spiced onions.
  4. Pour in the water, bring to a gentle simmer, then cover and cook on low for 55 to 60 minutes until the chicken is very tender. Keep the heat low so the sauce bubbles quietly rather than boiling hard.
  5. Meanwhile, put the couscous in a saucepan and stir through the olive oil. Pour over the just-boiled water, cover, and leave for 10 minutes, then fluff with a fork.
  6. Rinse the preserved lemon to remove excess brine, then discard the pulp and finely chop the peel. Stir the preserved lemon and olives into the tagine and simmer, uncovered, for 8 to 10 minutes until the sauce is slightly reduced and glossy.
  7. Stir most of the coriander into the sauce, then scatter the rest over the top. Serve the chicken and sauce with the couscous.

Recipe notes

Tips

  • If your preserved lemons are very salty, rinse well and use a little less peel, then add more at the table if needed.
  • For the best texture, keep the tagine at a gentle simmer; a hard boil can make the chicken tighten and the sauce turn greasy.

Substitutions

  • Replace chicken thighs with chicken leg quarters for a more traditional, rustic result; keep the cooking time similar and cook until the meat is very tender.
  • Replace fresh coriander with fresh flat-leaf parsley for a milder herbal finish.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate the chicken and sauce in a sealed container for up to 3 days. Reheat gently on the hob with a splash of water until piping hot; store couscous separately and refresh with a little boiling water before serving. Freeze the chicken and sauce for up to 3 months and defrost overnight in the fridge before reheating.
