Eid Chicken Tagine with Preserved Lemons and Olives
Why this recipe works
- Layered aromatics: Onion, garlic, saffron and ginger create a fragrant base before the chicken begins to braise.
- Bright, savoury balance: Preserved lemon and green olives cut through the richness of the chicken with salty, tangy depth.
- Tender, sauce-rich finish: A slow covered simmer gives the chicken time to soften while the onions thicken the sauce naturally.

Ingredient notes
- Prepare the preserved lemon properly: Rinse the preserved lemon and remove the pith so the peel adds fragrance and tang without overwhelming saltiness or bitterness.
- Use saffron carefully: Saffron is used for aroma and colour rather than heat; a little goes a long way in the braising liquid.
- Season at the end: Olives and preserved lemon both bring salt, so final seasoning is best adjusted once the sauce has reduced slightly.
Timing notes
- Mostly hands-off cooking: The active work is mainly slicing and building the base; the flavour develops during the covered simmer.
- Serve when the sauce is glossy: The tagine is ready when the chicken is tender and the sauce has lightly thickened around the onions, olives and lemon.
Make-ahead tips
- Good for making ahead: The flavours deepen after resting, making this tagine well suited to cooking a day in advance.
- Reheat gently: Warm in a covered pan over low heat with a splash of water until piping hot, keeping the sauce loose and glossy.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating thoroughly.
Serving ideas
- Serve with couscous: Couscous is ideal for catching the saffron-scented sauce and soft onions.
- Add bread at the table: Warm flatbread or crusty bread works well for scooping up the olives, lemon and braising juices.
- Finish with fresh herbs: A final scatter of coriander keeps the dish fresh against the rich, savoury sauce.

Ingredients
Instructions
- Halve and thinly slice the onion. Crush the garlic, finely chop the coriander, and rinse the preserved lemon under cold water; remove and discard the pith, then thinly slice the peel.
- In a tagine base or Dutch oven over medium heat, warm the olive oil. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until softened and starting to turn golden at the edges.
- Stir in the garlic, ground ginger, saffron, black pepper and the remaining salt, and cook for 1 minute until fragrant. Add 250 ml water and stir well, scraping up any stuck-on bits to form a seasoned braising liquid.
- Nestle in the chicken thighs, turning them to coat in the onion mixture. Bring to a gentle simmer, then cover and cook on low for 45 minutes, keeping the sauce at a steady, quiet bubble.
- Add the preserved lemon peel and green olives, tucking them into the sauce around the chicken. Cover again and simmer for 15 to 20 minutes, until the chicken is tender and the sauce looks glossy and lightly thickened.
- Scatter over most of the coriander and simmer uncovered for 3 to 5 minutes to bring the sauce together. Taste and adjust with a little more salt or pepper if needed, then finish with the remaining coriander and serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- If your preserved lemons are very salty, rinse them well and use a little less fine sea salt at the start, then adjust at the end.
- Keep the heat low once covered; a gentle simmer helps the onions melt into the sauce without catching.
- For vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone before serving.
Substitutions
- Replace Chicken thighs with Chicken drumsticks for a similar braise time and rich flavour.
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder herbal finish.
- Replace Extra virgin olive oil with Light olive oil if you prefer a more neutral base.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container for up to 3 days. Reheat gently in a covered pan over low heat with a splash of water until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
