Lebanese Kafta Bil Bandoura (Meatballs in Tomato Sauce)
Why this recipe works
- Warm, layered flavour: Allspice, cinnamon, parsley and onion season the lamb from within, while garlic and cumin build depth in the tomato sauce.
- Juicy meatballs: Browning the kafta first develops flavour without fully cooking it, so the meatballs finish gently in the sauce.
- Built for saucy serving: The tomato sauce is generous enough to spoon over rice or scoop up with flatbread, making the dish feel complete with simple sides.

Texture tips
- Keep the meatballs tender: Mix the lamb only until the parsley, onion and spices are evenly distributed; working it too much can make the kafta firm and dense.
- Do not cook them through when browning: The first browning stage is for colour and flavour. Let the meatballs finish in the tomato sauce so they stay moist.
Ingredient notes
- Use ripe tomatoes if possible: Ripe tomatoes grate into a fresher, softer sauce and give better natural sweetness than underripe fruit.
- Do not skip the warm spices: Allspice and cinnamon are key to the kafta flavour, giving the lamb its distinctive Lebanese-style seasoning.
Make-ahead tips
- Good for meal prep: The cooked meatballs and sauce keep well in the fridge and reheat gently, making this a practical make-ahead dinner.
- Freeze in portions: Cool the finished dish completely, then freeze in portions with plenty of sauce to protect the meatballs from drying out.
- Reheat gently: Warm in a covered pan over low heat with a splash of water, stirring carefully so the sauce loosens without breaking up the meatballs.
Serving ideas
- Serve with rice: Steamed rice is ideal for absorbing the tomato sauce and turning the kafta into a full meal.
- Add flatbread: Warm flatbread works well for scooping up the meatballs and any extra sauce left on the plate.

Ingredients
Instructions
- Finely grate half the onion into a mixing bowl and finely chop the parsley. Finely chop 2 garlic cloves and set aside for the sauce. Finely chop the remaining half onion and the remaining 2 garlic cloves separately.
- Add the minced lamb to the bowl with the grated onion and chopped parsley, then season with the allspice and ground cinnamon. Mix with your hands just until combined, then shape into 16 small meatballs. Chill the meatballs for 5 minutes while you heat the pan.
- Heat the olive oil in a large frying pan over medium-high heat. Brown the meatballs in batches for 5 to 7 minutes total, turning until well coloured on all sides; they do not need to be cooked through yet. Transfer to a plate.
- Lower the heat to medium and add the chopped onion to the same pan. Cook for 5 minutes, stirring, until softened and lightly golden. Stir in the chopped garlic and cook for 30 seconds until fragrant.
- Grate the tomatoes into the pan (discarding the skins) and stir in the ground cumin. Bring to a gentle simmer and cook for 5 minutes, stirring occasionally, until the sauce looks slightly thickened. Taste and adjust seasoning if needed.
- Return the meatballs and any resting juices to the pan, turning to coat in the sauce. Simmer gently for 10 to 12 minutes, until the meatballs are cooked through and the sauce is rich and glossy. Serve hot, spooning plenty of sauce over the top.

Serving suggestions
This recipe pairs well with:
Tips
- For the juiciest meatballs, mix the lamb only until the onion, parsley and spices are evenly distributed; overmixing can make them dense.
- Keep the sauce at a gentle simmer once the meatballs go back in, so it thickens without catching on the base of the pan.
Substitutions
- Replace Fresh parsley with Fresh coriander for a slightly brighter, more citrusy finish.
- Replace Minced lamb with minced beef for a milder flavour and a slightly firmer meatball.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a covered pan over low heat with a splash of water until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
