Moroccan Lentil Bowl with Couscous and Roasted Carrots

A Moroccan-style lentil bowl brings together tender green lentils, couscous and roasted vegetables in a practical, satisfying format. The lentils simmer in a tomato base with onion, garlic, cumin, coriander and cinnamon, giving the bowl earthy depth and gentle warmth without heaviness. Roasted carrots add caramelised sweetness and a firmer bite, while lemon, olive oil and fresh coriander keep the finish bright. It works well as a vegan lunch or light dinner, with enough structure to prepare ahead by storing the couscous and lentils separately.

Why this recipe works

  • Warm, layered flavour: Cumin, coriander and cinnamon bring depth to the tomato-lentil base without making the bowl hot or heavy.
  • Balanced textures: Tender lentils, fluffy couscous and caramelised roasted carrots give the bowl softness, lightness and bite.
  • Fresh finish: The lemon and olive oil dressing lifts the earthy lentils and sweet carrots just before serving.
  • Good for meal prep: The lentils and couscous can be stored separately, then reheated and finished with fresh coriander and lemon.

Ingredient notes

  • Use fresh spices if possible: Ground cumin, coriander and cinnamon are central to the flavour, so fresher spices will give a warmer, more fragrant result.
  • Rinse the lentils: Rinsing dried green lentils removes dust and helps the tomato sauce taste cleaner.
  • Finish with lemon to taste: Add the lemon dressing at the end and adjust gradually so the bowl tastes bright without overwhelming the spices.

Make-ahead tips

  • Keep the base and lentils apart: Store the lentils and couscous in separate airtight containers so the couscous stays light rather than absorbing too much sauce.
  • Reheat gently: Warm the lentils with a splash of water until piping hot, then add the lemon dressing and fresh coriander just before serving.
  • Build bowls when needed: Roasted carrots and lentils hold well, making this a useful prep-ahead lunch if assembled shortly before eating.

Ingredient swaps

  • For a gluten-free base: Replace the couscous with quinoa, cooked separately according to the packet instructions.
  • Swap the herbs: Use flat-leaf parsley instead of coriander for a milder, greener finish.
  • Adjust the spice warmth: A pinch of ground allspice can replace the cinnamon for a slightly peppery note.

Common mistakes

  • Boiling the lentils too hard: Keep the lentils at a gentle simmer so they cook evenly and hold their shape.
  • Letting the sauce dry out: If the lentils are not yet tender and the pan looks dry, add a splash more water and continue simmering.
  • Overhydrating the couscous: Cover it just long enough to absorb the water, then fluff with a fork to keep the grains separate.

  1. Heat the oven to 220°C (430°F). Peel the carrots, cut into batons, then toss on a baking tray with 1 tbsp of the olive oil, a pinch of the fine sea salt and the black pepper. Roast for 18 to 22 minutes, turning once, until tender and caramelised at the edges.
  2. Meanwhile, peel and finely chop the onion, then peel and crush the garlic. Warm 1 tbsp of the olive oil in a saucepan over medium heat, add the onion and cook for 6 to 8 minutes until softened. Stir in the garlic, ground cumin, ground coriander and ground cinnamon for 30 seconds until fragrant.
  3. Add the canned chopped tomatoes, dried green lentils, 450 ml of the water and 0.75 tsp of the fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 18 to 22 minutes, stirring occasionally, until the lentils are tender and the sauce is thick. If it looks dry before the lentils are done, add a splash more water.
  4. Put the couscous in a mixing bowl with 0.5 tsp of the fine sea salt and 200 ml of the water. Cover and leave for 5 minutes, then fluff with a fork. Stir through 1 tbsp of the olive oil to keep it light and separate.
  5. Finely chop the fresh coriander. Zest the lemon, then juice it; whisk the juice with the remaining 1 tbsp olive oil and a pinch of lemon zest. Taste and adjust with a little more fine sea salt if needed.
  6. Divide the couscous between two bowls and spoon over the spiced lentils. Top with the roasted carrots, then drizzle with the lemon dressing. Finish with the fresh coriander and the remaining lemon zest.

  • Replace ground cinnamon with a pinch of ground allspice for a slightly peppery warmth.

Storage

  • Refrigerate up to 3 days
