German Potato Bowl with Mustard Dressing, Cucumber and Gherkins
Why this recipe works
- Sharp, balanced dressing: Mustard and apple cider vinegar cut through the soft potatoes, while oil rounds the dressing into a glossy coating.
- Warm and crisp contrast: Tender dressed potatoes are finished with cucumber, red onion and gherkins for freshness and crunch.
- Easy to prep ahead: The potatoes can be dressed in advance, with the fresh toppings added just before serving to keep the bowl lively.

Timing notes
- Dress while warm: Toss the potatoes with the mustard dressing shortly after draining so they absorb the flavour instead of simply being coated.
- Add toppings at the end: Cucumber, onion, gherkins and dill are best added just before serving so they stay crisp and fresh.
Ingredient notes
- Mustard choice: Dijon gives a smooth, sharp dressing; whole-grain mustard makes it coarser and slightly gentler.
- Use good gherkins: Dill gherkins provide much of the bowl’s savoury, pickled character, so choose a brand with a clean, tangy brine.
- Soften the onion bite: If the red onion tastes too strong, soak it briefly in cold water, then drain well before adding it.
Make-ahead tips
- Keep the crunch separate: Store the dressed potatoes apart from the cucumber and onion, then combine everything just before eating.
- Warm gently: Reheat the potatoes gently with a splash of water if needed, then finish with the cold toppings and fresh dill.

Instructions
- Put the potatoes in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until a knife slides in easily. Drain well in a colander and let them steam-dry for 2 minutes.
- While the potatoes cook, whisk the Dijon mustard, apple cider vinegar, rapeseed oil, black pepper, and the remaining 0.5 tsp salt in a mixing bowl until glossy and emulsified. Taste and adjust with a little more vinegar if you want it sharper. Set aside.
- Slice the cucumber into thin half-moons and finely slice the red onion. Roughly chop the dill gherkin pickles and the fresh dill. Keep everything separate so the bowl stays crisp.
- Halve any larger potatoes, then add the warm potatoes to the dressing and toss gently until well coated. Let the potatoes sit for 3 to 5 minutes so they drink in the dressing. If it looks dry, toss again to re-coat.
- Divide the dressed potatoes between two bowls and top with the cucumber, red onion, and gherkins. Finish with the fresh dill. Serve warm, with the crunchy toppings added at the last moment.
Recipe notes
Tips
- Dress the potatoes while they are still warm so the mustard dressing soaks in rather than sitting on the surface.
- For a milder onion bite, soak the sliced red onion in cold water for 5 minutes, then drain well before serving.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a coarser texture and a slightly milder heat.
- Replace rapeseed oil with olive oil for a fruitier dressing.
Storage
- Refrigerate up to 2 days
- Store the dressed potatoes separately from the cucumber and onion if possible, then combine just before eating. Reheat the potatoes gently in a microwave or in a saucepan over low heat with a splash of water, then add the cold toppings.
