Middle Eastern Salmon Bowl with Couscous and Tahini Dressing

A Middle Eastern-inspired salmon bowl brings together warm spiced fish, fluffy couscous and a fresh chopped salad in a format that is satisfying without feeling heavy. Cumin, paprika and garlic give the roasted salmon a savoury depth, while cucumber, tomato and parsley keep the bowl bright and clean-tasting. The tahini dressing is central: creamy, nutty and sharpened with lemon so it coats the grains and fish without overwhelming them. Quick-pickled red onion adds crisp acidity, making this a useful lunch or light dinner with enough texture and freshness to feel complete.

Why this recipe works

  • Layered flavour: Cumin, paprika and garlic season the salmon, while lemon, tahini and pickled onion add brightness and depth.
  • Fresh contrast: Fluffy couscous, tender salmon, crisp vegetables and creamy dressing give the bowl a satisfying mix of textures.
  • Efficient cooking: The onion pickles, couscous steams and salad comes together while the salmon roasts, keeping the recipe practical for busy days.

Texture tips

  • Keep the salmon tender: Roast only until the thickest part is just opaque and flakes easily; it will continue to cook slightly after leaving the oven.
  • Adjust the tahini dressing: Tahini can thicken as it is whisked with lemon. Add cold water gradually until the dressing is smooth and pourable.

Ingredient notes

  • Choose good tahini: A smooth, pourable tahini gives the dressing a cleaner texture and avoids a pasty finish.
  • Scrunch the onion well: Massaging the sliced onion with lemon and salt softens its bite quickly and helps it taste lightly pickled by serving time.
  • Use fresh herbs: Fresh parsley brings lift to the couscous and salad; mint also works well for a cooler, brighter finish.

Make-ahead tips

  • Store components separately: Keep the salmon, couscous, salad, pickled onion and dressing in separate airtight containers so the vegetables stay crisp.
  • Reheat gently: Warm the salmon and couscous in a 180°C (355°F) oven until piping hot, then assemble with the cold salad and dressing.
  • Best freshly assembled: The bowl is at its best when assembled just before serving, while the salmon is warm and the vegetables remain fresh.

  1. Heat the oven to 220°C (430°F). Thinly slice the red onion and put it in a bowl with the juice of half the lemon and the fine sea salt. Scrunch with your hands for 30 seconds, then set aside to lightly pickle while you cook.
  2. Line a baking tray with baking paper if you like. Mix 2 tbsp extra virgin olive oil with the ground cumin, sweet paprika and finely grated garlic, then rub over the salmon. Roast for 10 to 12 minutes, until the salmon is just cooked through and flakes easily.
  3. Put the couscous in a saucepan with a pinch of black pepper and a small pinch of fine sea salt. Pour over the just-boiled water, cover with a lid, and leave off the heat for 5 minutes. Fluff with a fork and cover again to keep warm.
  4. Dice the cucumber and tomatoes and add them to a bowl. Finely chop the fresh parsley and stir most of it through the salad, reserving a little to finish. Taste the pickled onion and add a little more lemon juice if you want it sharper.
  5. In a small bowl, whisk the tahini with the remaining lemon juice, 1 tbsp extra virgin olive oil and the cold water until smooth and pourable. Add a pinch of fine sea salt and a little black pepper, then adjust with a splash more water if needed. The dressing should be nutty and tangy, not thick.
  6. Divide the couscous between two bowls and top with the salad and pickled onion. Add the roasted salmon, spoon over the tahini dressing, and finish with the reserved parsley. Serve straight away while the salmon is warm.

Recipe notes

Tips

  • For the best texture, take the salmon out when it is just opaque in the thickest part; it will carry on cooking slightly as it rests.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the salmon is cooked until piping hot all the way through.

Substitutions

  • Replace Sweet paprika with Smoked paprika for a smokier flavour.
  • Replace Couscous with Bulgur for a slightly chewier grain bowl.
  • Replace Fresh parsley with Fresh mint for a brighter, cooler finish.

Storage

  • Refrigerate up to 2 days
  • Store the salmon, couscous, salad, pickled onion and dressing in separate airtight containers. Reheat the salmon and couscous in a 180°C (355°F) oven until piping hot, then assemble with the cold salad and dressing.
