Chorizo Pasta with Smoky Tomato Cream Sauce
Why this recipe works
- Layered smoky flavour: Chorizo releases its seasoned oil into the pan, creating a savoury base for the onion, garlic, paprika and tomato sauce.
- Silky finish: Double cream softens the acidity of the tomatoes and gives the sauce a smooth coating texture without making it heavy.
- Weeknight-friendly: The sauce simmers while the pasta cooks, keeping the total cooking time practical for an everyday dinner.

Ingredient notes
- Use Spanish chorizo: Cured Spanish chorizo is best here because it slices cleanly and releases paprika-rich oil as it cooks.
- Choose smoked paprika: Smoked paprika reinforces the chorizo’s flavour and gives the tomato sauce its warm, savoury depth.
- Finish with a salty cheese: Manchego adds a nutty, salty finish; Parmesan also works if you want a similar savoury topping.
Common mistakes
- Boiling after adding cream: Keep the heat low once the cream goes in. A gentle warm-through helps the sauce stay smooth.
- Cooking the pasta too far: Drain the pasta while it is still al dente, as it softens slightly while being tossed through the hot sauce.
- Letting the sauce get too thick: If the sauce tightens as the pasta is tossed, loosen it with a little reserved pasta water until it coats evenly.
Make-ahead tips
- Make the base ahead: The chorizo tomato sauce can be made in advance; add the cream only when reheating and finishing the pasta.
- Reheat gently: Warm leftovers over low heat with a splash of water, stirring often until piping hot and smooth.
- Best served fresh: The pasta has the best texture straight after tossing, before it absorbs too much sauce.
Serving ideas
- Serve with greens: A crisp green salad or simply cooked greens balances the richness of the cream and chorizo.
- Wine pairing: A medium-bodied Spanish red, such as Rioja, suits the smoky paprika and tomato base.

Instructions
- Bring a large pot of water to the boil and season it with 1 tsp of the fine sea salt. Meanwhile, slice the chorizo into coins, finely chop the onion, and finely chop the garlic. Grate the Manchego and set it aside.
- Heat the olive oil in a large frying pan over medium heat, then add the chorizo and cook for 3 to 4 minutes until it releases its oil and starts to colour. Add the onion and cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic and cook for 30 seconds until fragrant.
- Stir in the smoked paprika and dried oregano for 20 seconds, then add the chopped tomatoes, remaining salt, and black pepper. Bring to a gentle simmer and cook for 8 to 10 minutes, stirring occasionally, until slightly thickened. Reduce the heat to low.
- Cook the egg pasta in the boiling water until just al dente, following the packet timing. Drain well, reserving a small splash of the cooking water in case you need to loosen the sauce. Add the pasta to the pan and toss until evenly coated.
- Pour in the double cream and warm gently for 1 to 2 minutes, stirring, until the sauce turns silky; do not let it boil. If needed, add a spoonful of the reserved pasta water to bring it together. Serve straight away, topped with the grated Manchego.

Tips
- Keep the heat low once the cream goes in; a gentle warm-through keeps the sauce smooth and stops it splitting.
- Cook the pasta until just al dente, as it will finish cooking slightly as you toss it through the hot sauce.
- If serving anyone who is vulnerable, use pasteurised cream and ensure the dish is served piping hot.
Substitutions
- Replace Double cream with Cooking cream for a lighter, looser sauce.
- Replace Manchego cheese with Parmesan for a similar salty finish.
- Replace Egg pasta nest with Spaghetti, keeping the same cooking method and draining it al dente.
Storage
- Refrigerate up to 3 days
- Cool quickly and refrigerate in a sealed container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, stirring often to keep the sauce smooth.
