Ovenschotel Gehakt en Aardappel (Dutch Minced Beef and Potato Casserole)
Why this recipe works
- Savoury base: Browning the beef until the pan is nearly dry concentrates the flavour before the tomato purée is added.
- Stable, creamy mash: Warm milk, butter, and egg give the potato topping a smooth texture that still holds soft peaks when baked.
- Golden topping: Roughing up the mash with a fork creates ridges that brown well under the cheese.

Texture tips
- Build surface texture: After spreading the mash, drag a fork over the surface to create ridges; they catch the cheese and brown more evenly.
- Avoid watery mash: Let the drained potatoes steam dry in the hot pot before mashing so the topping stays creamy rather than loose.
Common mistakes
- Do not leave the beef wet: Cook the mince until excess liquid has evaporated; a wet filling can make the potato layer sink and soften.
- Rest before serving: Let the casserole stand briefly after baking so the layers settle and portions lift out more neatly.
Ingredient swaps
- Use Gouda for a Dutch-style finish: Swap the Cheddar for Gouda if you prefer a milder, more traditional cheese topping.
- Adjust the tomato flavour: Use concentrated tomato paste from a small tin or tube in the stated amount. This is the same product as the tomato purée specified here.
Make-ahead tips
- Assemble in advance: The casserole can be assembled ahead, covered, and refrigerated before baking; allow a little extra oven time if baking from chilled.
- Freeze in portions: Cool completely, portion, and freeze for easy reheating later.
- Reheat until piping hot: Defrost overnight in the fridge, then reheat in a 180°C (355°F) oven until thoroughly hot in the centre.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Peel the potatoes and cut into even chunks.
- Put the potatoes in a large pot, cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
- Meanwhile, peel and finely chop the yellow onion. Melt 20 g of the unsalted butter in a frying pan over medium heat and cook the onion for 6 to 8 minutes until soft and lightly golden.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated. Stir in the tomato purée and cook for 1 minute, then season with 0.5 tsp fine sea salt, 0.5 tsp black pepper and the ground nutmeg.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam dry. Warm the whole milk, then mash the potatoes with the remaining 40 g unsalted butter and the warm milk until smooth.
- Beat the egg, then stir it into the mash along with the remaining 0.5 tsp fine sea salt and 0.5 tsp black pepper. The mash should be creamy but able to hold soft peaks; if it feels stiff, mash a little more to loosen it.
- Spread the beef mixture in the bottom of a baking dish. Spoon the mash over the top and smooth it out, then rough up the surface with a fork for extra browning.
- Grate the Cheddar cheese and sprinkle it evenly over the mash. Bake for 20 to 25 minutes until bubbling at the edges and golden on top.
- Leave the casserole to stand for 5 minutes before serving so it slices neatly. Serve hot.
Recipe notes
Tips
- For a deeper savoury flavour, let the beef cook until the pan is nearly dry before adding the tomato purée; this helps it caramelise rather than steam.
- If you want a more defined crust, run the dish under a hot grill for 2 to 3 minutes at the end, watching closely so the Cheddar does not burn.
- Eggs should be fully cooked for young children, older adults, and anyone who is pregnant or immunocompromised; bake until the centre is piping hot.
Substitutions
- Replace Cheddar cheese with Gouda cheese for a more traditional Dutch-style topping.
- Replace whole milk with low-fat milk for a lighter mash, keeping the same amount.
- Use concentrated tomato paste from a small tin or tube in the stated amount. This is the same product as the tomato purée specified here.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Freeze in portions for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot.
