Gnocchi al Gorgonzola e Noci (Gnocchi with Gorgonzola and Walnuts)
Why this recipe works
- Silky sauce: Cream, Gorgonzola and reserved gnocchi water combine into a glossy sauce that clings well to the gnocchi.
- Crunch against softness: Toasted walnuts cut through the soft gnocchi and creamy sauce with a crisp, nutty finish.
- Fast enough for weeknights: Packet gnocchi cook in minutes, while the sauce comes together gently in the same pan used for the walnuts.

Texture tips
- Keep the sauce gentle: Warm the cream and cheese over a low heat; boiling can make the sauce split or turn grainy.
- Loosen as needed: Add reserved cooking water gradually until the sauce lightly coats the gnocchi rather than sitting heavily in the pan.
Ingredient notes
- Choose the right Gorgonzola: A creamier, milder Gorgonzola gives a softer sauce, while a stronger blue cheese will make the dish more assertive.
- Toast the walnuts: Brief toasting brings out the nuts’ aroma and adds a cleaner crunch than using them raw.
Timing notes
- Serve straight away: The sauce is at its best as soon as the gnocchi are coated and piping hot, before it thickens on standing.
- Best eaten fresh: Leftovers can be reheated gently, but the texture is smoothest when cooked and served immediately.

Ingredients
Instructions
- Toast the walnuts in a dry large frying pan over a medium heat for 2 to 3 minutes, tossing, until fragrant and lightly browned. Tip onto a plate and roughly chop once cool enough to handle.
- Bring a large pot of water to the boil. Cook the gnocchi according to the packet instructions until they float, then scoop out and reserve about 150 ml of the cooking water before draining.
- Return the frying pan to a low heat and melt the butter. Add the double cream and warm gently until steaming but not boiling.
- Crumble in the gorgonzola and stir until melted and smooth. Add the parmesan and a splash of the reserved cooking water, stirring until the sauce looks glossy and lightly coats the spoon.
- Add the drained gnocchi and toss for 1 to 2 minutes until coated and piping hot, loosening with a little more cooking water if needed. Finish with the toasted walnuts and black pepper, then serve straight away.
Recipe notes
Tips
- Keep the sauce on a low heat once the gorgonzola goes in; if it boils hard, it can split and turn grainy.
- Reserve more cooking water than you think you need, then add it a tablespoon at a time to keep the sauce silky and clinging.
- If serving anyone vulnerable, make sure the gnocchi are piping hot all the way through before serving.
Substitutions
- Replace Gorgonzola cheese with blue-cheese for a similar tang and melt.
- Replace Walnuts with hazelnuts for a sweeter, toastier crunch.
- Replace Parmesan with grana-padano-cheese for a slightly milder finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat gently in a frying pan over a low heat with a splash of water until piping hot, stirring often to keep the sauce smooth.
