Vegan Tacos de Coliflor Asada (Roasted Cauliflower Tacos)

Tacos de coliflor asada give the familiar taco format a vegetable-led centrepiece: cauliflower roasted at high heat until tender inside, browned at the edges and coated with smoky chilli, cumin and garlic. Served in warm corn tortillas, the filling has enough depth to stand on its own, while avocado adds creaminess, red cabbage brings crisp freshness and lime cuts through with acidity. They work well as an easy vegan dinner because the components are simple, quick to prepare and assembled at the table for the best texture.

Why this recipe works

  • Roasted edges: High-heat roasting gives the cauliflower browned, crisp edges while keeping the centres tender.
  • Fresh balance: Lime-dressed cabbage cuts through the smoky spice mix and avocado, keeping each taco bright rather than heavy.
  • Easy to adjust: The chilli level, herbs and cabbage can be adapted without changing the core roasted cauliflower filling.

Adjust the heat

  • For less heat: Reduce the hot chilli powder and use sweet paprika in place of smoked paprika if you want a softer, less smoky flavour.
  • For more heat: Add extra chilli powder to the spice mix, or finish the tacos with sliced fresh chilli or a hot salsa.
  • Keep the heat balanced: Use plenty of lime and avocado when serving; acidity and creaminess help round out the chilli.

Texture tips

  • Give the cauliflower space: Spread the florets in a single layer so they roast properly rather than steaming on the tray.
  • Assemble just before eating: Keep the tortillas, cauliflower and toppings separate until serving so the tacos stay warm and the cabbage stays crisp.

Make-ahead tips

  • Store components separately: Keep the roasted cauliflower and cabbage in separate airtight containers, then warm the cauliflower before assembling.
  • Re-crisp before serving: Reheat the cauliflower on a baking tray at 220°C (430°F) until hot and the edges have firmed up again.
  • Finish fresh: Slice the avocado and warm the tortillas just before serving for the best texture.

  1. Heat the oven to 230°C (445°F). Cut the cauliflower into bite-sized florets and finely grate the garlic.
  2. In a mixing bowl, stir together the olive oil, smoked paprika, ground cumin, hot chilli powder and fine sea salt. Add the cauliflower and toss until evenly coated.
  3. Spread the cauliflower out on a baking tray in a single layer. Roast for 20 to 25 minutes, turning once, until deeply browned and tender with crisp edges.
  4. While the cauliflower roasts, halve the lime and cut the avocado into slices. Toss the red shredded cabbage with a squeeze of lime, and roughly chop the fresh coriander.
  5. Warm the corn tortillas in a dry frying pan over medium heat for about 20 to 30 seconds per side, or until pliable. Keep them stacked and covered with a clean tea towel as you go.
  6. Fill the warm tortillas with the roasted cauliflower, then top with avocado, cabbage and coriander. Finish with the remaining lime to squeeze over at the table.

Recipe notes

Tips

  • For the best browning, make sure the cauliflower is well spaced on the tray; if it is crowded it will steam rather than roast.
  • If you are sensitive to heat, start with half the hot chilli powder and add more to taste after roasting.
  • Food safety note: if serving to vulnerable groups, wash the fresh coriander and lime thoroughly before use.

Substitutions

  • Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
  • Replace Red shredded cabbage with Green cabbage for a slightly sweeter crunch.
  • Replace Fresh coriander with Fresh parsley if you prefer a different herb note.

Storage

  • Refrigerate up to 2 days
  • Store the roasted cauliflower and cabbage separately in airtight containers. Reheat the cauliflower on a baking tray at 220°C (430°F) for 6 to 8 minutes until hot and re-crisped; assemble tacos just before serving.
