Enfrijoladas with Crumbled Cheese (Tortillas in Black Bean Sauce)
Why this recipe works
- Smoky bean sauce: Black beans, onion, garlic and chipotle are simmered together before blending, giving the sauce a savoury base with gentle smoke and depth.
- Smooth coating: Blending the beans creates a glossy sauce thick enough to cling to the tortillas without needing a heavy filling.
- Fast assembly: Canned beans and a short simmer keep the recipe quick, while warming the tortillas just before dipping helps them fold neatly.

Adjust the heat
- For less heat: Remove the seeds from the chipotle pepper before simmering, or use a smaller amount and adjust after blending.
- For more smoke and heat: Add extra chipotle gradually, tasting the sauce after it has simmered so the chilli has time to blend into the beans.
Texture tips
- Keep the sauce coating consistency: After blending, simmer the sauce until it coats the back of a spoon; if it becomes too thick, loosen it with a splash of stock.
- Dip just before serving: Warm, dip and fold the tortillas shortly before plating, as assembled enfrijoladas soften quickly once coated.
Make-ahead tips
- Make the sauce ahead: The black bean sauce can be prepared in advance and stored separately, then reheated gently before dipping fresh tortillas.
- Freeze the sauce only: Freeze the blended bean sauce rather than assembled enfrijoladas, then defrost overnight in the fridge and reheat with a little stock.
Ingredient notes
- Use corn tortillas: Corn tortillas give enfrijoladas their traditional flavour and hold up better to the bean sauce than softer flour tortillas.
- Queso fresco alternatives: Feta can stand in for queso fresco, but it is saltier and firmer, so taste the sauce before adding extra seasoning.

Ingredients
Instructions
- Thinly slice the white onion and finely chop the garlic. Thinly slice the red onion and set it aside for serving. Roughly chop the coriander and set aside.
- Put a saucepan over medium heat and add the white onion with a small splash of vegetable stock to stop it catching. Cook for 4 to 5 minutes until softened, then add the garlic and cook for 1 minute more until fragrant.
- Add the chipotle pepper, canned black beans and vegetable stock to the pan. Bring to a gentle simmer and cook for 5 minutes so the flavours meld.
- Blend the bean mixture until smooth, then return it to the saucepan. Simmer for 2 to 4 minutes until glossy and thick enough to coat the back of a spoon; add a splash more stock if it becomes too thick.
- Warm the corn tortillas in a large frying pan over medium heat for 20 to 30 seconds per side, just until pliable. Working one at a time, dip each tortilla into the hot bean sauce to coat, then fold in half and place on plates.
- Spoon a little extra bean sauce over the tortillas. Top with crumbled queso fresco, the sliced red onion and a drizzle of mexican crema. Finish with coriander and serve straight away while the sauce is hot.
Recipe notes
Tips
- For the best texture, keep the bean sauce at a gentle simmer after blending; if it boils hard it can spit and thicken too quickly.
- If the sauce tastes a little flat, simmer it for an extra 2 minutes to concentrate the flavour before dipping the tortillas.
- If serving to anyone who should avoid spicy food, remove the seeds from the chipotle pepper before simmering.
Substitutions
- Replace mexican crema with greek yogurt for a tangier topping.
- Replace queso fresco with feta cheese for a saltier, firmer crumble.
- Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb flavour.
Storage
- Refrigerate up to 3 days
- Store the bean sauce separately in an airtight container in the fridge. Reheat gently in a saucepan with a splash of vegetable stock until piping hot, then dip freshly warmed corn tortillas; assembled enfrijoladas go soggy if stored. Freeze the sauce only, for up to 2 months, and defrost overnight in the fridge before reheating.
