Latin Roasted Veg Bowl

A roasted vegetable grain bowl brings together the familiar structure of rice, beans, vegetables and fresh toppings in a colourful, satisfying lunch. Here, sweet potato, red pepper and red onion are roasted with cumin and smoked paprika until tender, lightly charred and gently smoky. Coriander-lime rice gives the bowl a bright, aromatic base, while black beans add substance and avocado softens the sharper lime finish. It is the kind of practical bowl that works well warm, is easy to vary with herbs or spices, and feels hearty without being heavy.

Why this recipe works

  • Layered flavour: Smoked paprika and cumin season the roasted vegetables, while lime, garlic and coriander lift the rice with freshness.
  • Good texture contrast: Tender roasted sweet potato, lightly charred vegetables, warm black beans and creamy avocado keep each bowl varied and satisfying.
  • Meal-prep friendly: The rice, beans and roasted vegetables store well together, with the avocado best added fresh just before serving.

Ingredient notes

  • Choose firm-ripe avocado: Use an avocado that yields slightly but still slices cleanly, so it adds creaminess without turning mushy in the bowl.
  • Use lime to finish: A final squeeze of lime sharpens the smoky vegetables and keeps the rice tasting fresh.
  • Fresh coriander matters: Fresh coriander gives the rice a brighter finish than dried herbs; parsley is a good milder alternative.

Common mistakes

  • Avoid overcrowding the tray: Spread the vegetables out well so they roast rather than steam, helping the edges colour properly.
  • Drain the rice well: Excess water will dull the lime and coriander flavour and can make the bowl feel heavy.
  • Keep avocado separate: Store the cooked components together if needed, but slice the avocado fresh to avoid browning and softness.

Make-ahead tips

  • Best storage approach: Keep the avocado separate from the rice, beans and roasted vegetables until serving.
  • Reheat gently: Warm the cooked components with a splash of water until piping hot, then add avocado, coriander and lime.
  • Good for lunches: The roasted vegetables, rice and beans hold well for several days, making this a useful packed-lunch base.

Serving ideas

  • Add a sauce: Serve with salsa, hot sauce or a simple lime dressing if you want a saucier bowl.
  • Finish with freshness: Extra coriander and lime wedges give the bowl a brighter, more vibrant finish.
  • Serve with something crisp: Tortilla chips or a simple shredded salad work well alongside the soft rice, beans and avocado.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm chunks; cut the red pepper into bite-size pieces and the red onion into wedges.
  2. Tip the sweet potato, red pepper and red onion onto a baking tray. Add the olive oil, ground cumin, smoked paprika and 0.75 tsp of the fine sea salt, then toss well to coat.
  3. Roast for 25 to 30 minutes, turning once, until the sweet potato is tender and the edges are lightly charred. If the pepper is colouring too quickly, move it to the centre of the tray when you turn everything.
  4. Meanwhile, rinse the long-grain white rice until the water runs mostly clear. Cook in a saucepan of boiling water for 10 to 12 minutes until tender, then drain well in a colander and return to the pan off the heat.
  5. Finely grate or crush the garlic and stir it into the hot rice with the zest and juice of half the lime and the remaining 0.5 tsp fine sea salt. Roughly chop the fresh coriander and fold most of it through the rice, reserving a little to finish.
  6. Drain and rinse the canned black beans, then warm them in the empty saucepan over a low heat for 2 to 3 minutes with a squeeze of lime juice and a splash of water if needed. Stir until hot throughout.
  7. Halve, stone and slice the avocado. Divide the coriander-lime rice between two bowls, top with the roasted vegetables and black beans, then add the avocado and the reserved coriander. Serve with the remaining lime cut into wedges for squeezing over.

Recipe notes

Tips

  • Cut the sweet potato into even chunks so it roasts at the same rate as the pepper and onion.
  • For extra colour and flavour, let the vegetables take on a little char at the edges before removing from the oven.
  • If serving anyone who is pregnant, elderly, or immunocompromised, wash the fresh coriander and lime well before using.

Substitutions

  • Replace Fresh coriander with Fresh parsley for a milder, more herby finish.
  • Replace Smoked paprika with Ground paprika for a less smoky flavour.
  • Replace Ground cumin with Curry powder for a warmer, more aromatic spice profile.

Storage

  • Refrigerate up to 3 days
  • Store the rice, roasted vegetables and black beans together in an airtight container; keep the avocado separate and slice fresh when serving. Reheat in the microwave or in a saucepan with a splash of water until piping hot, then add the avocado and a squeeze of lime.
