Slow-Cooked Lamb Ouzi with Spiced Rice

Lamb ouzi brings together the generous, sharing-style qualities of Middle Eastern rice dishes: tender meat, fragrant grains, warm spices and a nutty sweet-savoury finish. Here, lamb shoulder is slow-braised until soft enough to pull apart, then served over fluffy basmati rice scented with cardamom and cinnamon. Toasted almonds add crunch, while raisins give the rice its recognisable pockets of sweetness. Finished with a little reduced cooking liquid, it is a substantial dinner dish with enough polish for a festive table, yet practical to serve from one large platter.

Why this recipe works

  • Layered spicing: Cinnamon, allspice and cardamom season both the lamb and the rice, giving the whole dish a coherent, aromatic depth.
  • Tender, generous centrepiece: Slow braising turns lamb shoulder soft and rich, making it ideal for spooning over a platter of rice.
  • Sweet-savoury contrast: Toasted almonds bring crunch while raisins add gentle sweetness against the savoury lamb and stock-cooked rice.

Timing notes

  • Rest the rice: Keep the rice covered off the heat before fluffing; this finishes the steaming and helps the grains separate cleanly.
  • Most of the time is passive: The main active work is browning the lamb, softening the onion and preparing the rice; the long braise does the tenderising.

Ingredient notes

  • Choose lamb shoulder: Boneless lamb shoulder suits slow cooking because it becomes tender and flavours the cooking liquid as it braises.
  • Rinse and drain the rice well: Rinsing removes excess starch, while draining prevents the rice from taking on too much surface water before cooking.
  • Handle cardamom pods carefully: Lightly crushing the pods releases aroma, but counting and removing them before serving makes the dish easier to eat.

Common mistakes

  • Do not crowd the lamb: Brown the lamb in batches so it sears rather than steams; this gives the sauce a deeper savoury base.
  • Reduce the cooking liquid: After the lamb is tender, simmer the liquid until slightly glossy so it coats the meat and rice rather than soaking the platter.
  • Avoid heavy rice: Once the rice is cooked, fluff it gently rather than stirring hard, which can break the grains and make the finish claggy.

Make-ahead tips

  • Store lamb and rice separately: Keeping the components in separate airtight containers helps the rice stay fluffy and prevents it from absorbing all the sauce.
  • Reheat gently: Warm the lamb with a little cooking liquid over low heat, and reheat the rice covered with a small splash of water until steaming.
  • Freezer-friendly components: The cooked lamb and rice can be frozen separately, then thawed and reheated for an easier future meal.

Instructions

  1. Heat the oven to 160°C (320°F). Cut the lamb into large chunks and season with the fine sea salt and black pepper.
  2. Heat the olive oil in a dutch oven over medium-high heat. Brown the lamb well on all sides in batches, then transfer to a plate.
  3. Reduce the heat to medium and add the onion to the pot. Cook for 6 to 8 minutes until softened and lightly golden.
  4. Stir in the ground cinnamon and allspice, then lightly crush the cardamom pods and add them. Cook for 1 minute until fragrant.
  5. Return the lamb to the pot and pour in the lamb stock. Bring to a gentle simmer, cover, then transfer to the oven and cook for 2 hours until the lamb is very tender.
  6. Meanwhile, rinse the basmati rice in a colander under cold water until the water runs mostly clear. Leave to drain well.
  7. Toast the almonds in a dry saucepan over medium heat for 3 to 5 minutes, stirring often, until golden and fragrant. Tip into a bowl and set aside.
  8. Wipe out the saucepan, then heat the olive oil over medium heat. Lightly crush the cardamom pods, add them to the pan, then stir in the rice and cook for 2 minutes to coat the grains.
  9. Add the ground cinnamon, fine sea salt and lamb stock, then bring to the boil. Cover, reduce to low, and cook for 12 minutes; remove from the heat and rest, covered, for 10 minutes until fluffy.
  10. Lift the lamb out of its cooking liquid and cover to keep warm. Skim any excess fat from the surface, then simmer the liquid for 8 to 10 minutes until slightly reduced and glossy.
  11. Fluff the rice with a fork and stir through the toasted almonds and raisins. Spoon the rice onto a platter, top with the lamb, and finish with a little of the reduced cooking liquid.

Recipe notes

Tips

  • For the best texture, brown the lamb properly until deep golden; it adds richness to the final sauce.
  • If serving children, lightly crush the cardamom pods but count them in and remove them before serving so no one bites into a pod.

Substitutions

  • Replace Lamb shoulder with Lamb leg boneless for a leaner result; start checking for tenderness 20 minutes earlier.
  • Replace Almonds with Pistachios for a more traditional festive finish and a greener colour.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate the lamb and rice in separate airtight containers. Reheat the lamb with a splash of its cooking liquid in a covered saucepan over low heat until piping hot, and reheat the rice in the microwave with a tablespoon of water, covered, until steaming.
