Bacalao a la Vizcaína Navideño (Christmas Salt Cod Stew)
Why this recipe works
- Layered savoury depth: Softened onion, bloomed guajillo chilli, tomatoes, olives and capers build a sauce with warmth, sweetness and briny balance.
- Salt cod handled properly: Soaking the cod before cooking reduces excess salt and gives the fish a cleaner flavour and better texture in the finished stew.
- Hearty but balanced: Potatoes make the stew substantial, while the tomato-based sauce and sharp capers keep the richness from feeling heavy.

Timing notes
- Plan for soaking: The cod needs a long soak before cooking, with the water changed a few times, so begin the process the night before or early in the day.
- Let the stew settle: Resting off the heat helps the sauce thicken slightly and allows the cod, potatoes and briny ingredients to come together.
Authenticity notes
- Christmas dish: In Mexico, bacalao a la Vizcaína is strongly associated with Christmas and festive family meals.
- Mexican-style sauce: This version uses guajillo chilli and tomato for a smooth, mildly spiced sauce alongside the classic olives, capers and potatoes.
Common mistakes
- Adding salt too early: Salt cod, olives and capers all vary in salinity, so taste after soaking and again at the end before adding any extra salt.
- Boiling the cod: Once the fish is added, keep the stew at a gentle simmer; aggressive boiling can toughen the cod and break it apart.
Make-ahead tips
- Soak and prep in advance: The cod can be soaked ahead, and the potatoes, onion, garlic and pepper can be prepared before cooking to make assembly smoother.
- Reheat gently: Warm leftovers over a low heat until piping hot, adding a little water if the sauce has thickened too much in the fridge.

Ingredients
Instructions
- Rinse the salted cod, then cover with cold water in a large bowl and soak for 8 to 12 hours, changing the water 2 to 3 times. Drain well. Taste a small flake and if it is still very salty, soak for a little longer.
- Put the potatoes in a large pot, cover with cold water and bring to the boil. Simmer for 12 to 15 minutes until just tender, then drain and set aside. When cool enough to handle, peel if you like and cut into bite-sized pieces.
- Slice the onion and peel the garlic. Heat the olive oil in the pot over a medium heat, then cook the onion with a pinch of salt for 8 to 10 minutes until soft and sweet, stirring regularly. Add the garlic and cook for 1 minute more.
- Stir in the guajillo chili powder and cook for 30 seconds to bloom the spice. Add the tomatoes and bay leaves, then bring to a gentle simmer. Cook for 10 minutes until the tomatoes have broken down and the sauce looks glossy.
- Carefully blend the sauce until smooth, then return it to the pot over a low heat. If your blender is small, do this in batches and keep the sauce hot but not boiling. Season with the black pepper.
- Cut the red pepper into strips. Add the pepper, olives and capers to the sauce and simmer for 10 minutes until the pepper is tender but still has a little bite. Stir occasionally to prevent sticking.
- Add the soaked cod and the cooked potatoes to the pot, nestling them into the sauce. Simmer gently for 12 to 15 minutes until the cod is opaque and flakes easily, and the potatoes are coated in the sauce. Taste and add fine sea salt only if needed.
- Rest the stew off the heat for 10 minutes so the flavours settle and the sauce thickens slightly. Remove the bay leaves. Serve hot, spooning plenty of sauce over each portion.

Serving suggestions
This recipe pairs well with:
Tips
- For the best texture, keep the stew at a gentle simmer once the cod goes in; a hard boil can make the fish tough and cause it to break up.
- Salt levels vary a lot with salted cod, so always taste after soaking and again at the end before adding any fine sea salt.
Substitutions
- Replace Tomato with canned chopped tomatoes for a similar flavour and a slightly smoother sauce.
- Replace Green pitted olives with black pitted olives for a softer, rounder olive flavour.
Storage
- Refrigerate up to 3 days
- Cool, cover and refrigerate. Reheat gently in a saucepan over a low heat until piping hot, adding a splash of water if the sauce has thickened too much.
