Lamb Ouzi with Saffron Basmati Rice
Why this recipe works
- Layered savoury flavour: Browning the lamb first creates a deeper base before the onion, garlic, cinnamon and allspice are added.
- Gentle simmering: Cooking the lamb slowly in stock keeps the meat tender and gives the sauce enough body to spoon over the rice.
- Balanced textures: Soft saffron rice and tender lamb are lifted by crisp toasted almonds and fresh parsley.

Timing notes
- Mostly hands-off cooking: The active work is mainly browning, chopping and finishing; most of the time is the lamb simmering gently.
- Serve soon after assembly: The rice is at its best while freshly steamed, with the lamb and juices spooned over just before serving.
Make-ahead tips
- Cook the lamb ahead: The lamb can be cooked in advance and reheated gently with a splash of water or stock until piping hot.
- Keep rice and lamb separate: Store the rice and lamb in separate airtight containers so the rice does not absorb too much sauce.
- Freeze the lamb for best results: The lamb freezes well with its cooking juices; the rice can also be frozen, though it may soften slightly after reheating.
Ingredient notes
- Use lamb shoulder: Boneless lamb shoulder suits slow simmering because it becomes tender while keeping a rich, savoury flavour.
- Bloom the saffron: Steeping the saffron in just-boiled water helps release its colour and aroma before it is stirred through the rice.
- Choose nuts to suit the finish: Almonds give a clean toasted crunch, while pistachios add a more colourful, richer nutty finish.
Common mistakes
- Do not crowd the lamb: Brown the lamb in batches if needed; crowded meat steams instead of developing a savoury crust.
- Avoid a hard boil: Keep the lamb at a gentle simmer so it turns tender without the sauce reducing too quickly.
- Drain the rice well: After boiling, drain the basmati thoroughly before steaming it with the saffron so the grains stay separate.

Instructions
- Cut the lamb into bite-sized chunks. Peel and finely chop the onion, and peel and crush the garlic. Measure out the spices, salt and pepper so they are ready to go.
- Heat the olive oil in a Dutch oven over medium-high heat. Add the lamb and brown well on all sides, 6 to 8 minutes, working in batches if needed so it sears rather than stews. Tip off any excess fat if there is a lot.
- Reduce the heat to medium and add the onion with a pinch of the salt, then cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic, ground cinnamon and allspice and cook for 1 minute until fragrant. Add the chicken stock, remaining salt and the black pepper, scraping up any browned bits.
- Bring to a gentle simmer, cover, then cook on low for 60 minutes until the lamb is very tender. If the liquid reduces too quickly, add a splash of water to keep the lamb just covered. Taste and adjust seasoning if needed.
- While the lamb finishes, put the saffron in a small bowl and cover with 3 tbsp just-boiled water from the kettle; leave to steep for 5 minutes. Rinse the basmati rice until the water runs mostly clear. Cook the rice in a saucepan of boiling salted water for 8 to 10 minutes until tender, then drain well and return to the pan.
- Stir the saffron and its soaking liquid through the hot rice, then cover and leave off the heat for 5 minutes to steam. Toast the almonds in a dry frying pan over medium heat for 3 to 5 minutes until golden, shaking the pan often. Finely chop the parsley.
- Spoon the saffron rice onto a serving platter or plates. Top with the lamb and a little of its cooking juices. Finish with the toasted almonds and parsley, and serve straight away.
Recipe notes
Tips
- For deeper flavour, take the time to brown the lamb properly in batches so it develops a good crust.
- Keep the lamb at a gentle simmer rather than a rapid boil so it turns meltingly tender without drying out.
- If serving vulnerable groups, ensure the lamb is cooked until piping hot throughout before serving.
Substitutions
- Replace Almonds with Pistachios for a more traditional nutty finish.
- Replace Chicken stock with Vegetable broth for a lighter, less meaty base.
Storage
- Refrigerate up to 3 days
- Cool the lamb and rice quickly, then refrigerate in airtight containers. Reheat the lamb gently on the hob with a splash of water or stock until piping hot; reheat the rice in the microwave with a spoonful of water, covered, until steaming. Freeze the lamb (with its juices) for best texture; rice can be frozen but may soften slightly on reheating.
