Christmas Stuffed Peppers with Minced Beef, Rice and Tomato Sauce
Why this recipe works
- Savoury depth: Softened onion, garlic, browned beef and sweet paprika build a rounded filling before the peppers go into the oven.
- Bright tomato sauce: Tomato passata and dry white wine cut through the richness of the beef and keep the finished dish lively.
- Good for planning ahead: The peppers hold their shape well after baking and can be refrigerated or frozen with the sauce for easy reheating.

Timing notes
- Split the work clearly: Most of the active time is spent preparing the rice, vegetables and beef filling; once covered, the peppers bake with little attention.
- Best served hot: Serve once the peppers are tender and the sauce is bubbling, so the filling stays moist and the tomato sauce coats well.
Ingredient notes
- Choose stable peppers: Firm, evenly sized peppers are easiest to stuff and are less likely to collapse or tip over during baking.
- Steam-dry the rice: Letting the drained rice sit briefly helps prevent a wet filling and keeps the texture lighter.
- Paprika choice: Sweet paprika keeps the flavour mellow; smoked paprika gives the sauce and beef a deeper, more savoury character.
Make-ahead tips
- Assemble in advance: The peppers can be filled and held in the fridge before baking; add the sauce to the dish when ready to cook.
- Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a splash of water if the sauce has thickened.
- Freeze with sauce: Cooked portions freeze well with their tomato sauce, which helps protect the filling from drying out.
Common mistakes
- Wet filling: Rice that is not well drained can make the stuffing heavy, so let it shed excess moisture before mixing with the beef.
- Firm peppers: If the peppers still feel too firm after the uncovered bake, return them to the oven until tender throughout.
- Thin sauce: If the sauce looks loose, briefly simmer it separately until lightly thickened before spooning it back over the peppers.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Cook the rice in a saucepan of salted water for 10 minutes, then drain well and set aside to steam-dry.
- Slice the tops off the peppers and remove the seeds and membranes. Finely chop the pepper tops (discard the stalks) and set aside; put the hollowed peppers in a baking dish.
- Warm the olive oil in a large frying pan over a medium heat. Finely chop the onion, then cook it with the chopped pepper tops and a pinch of the salt for 8 to 10 minutes until soft and sweet.
- Crush the garlic and stir it into the pan for 30 seconds until fragrant. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated.
- Stir in the sweet paprika, black pepper and the remaining salt. Tip in the cooked rice and mix until the filling is evenly combined, then take off the heat.
- Spoon the filling into the peppers, packing it in gently. Pour the tomato passata and dry white wine around the peppers, then cover the dish tightly with foil.
- Bake for 30 minutes, then remove the foil and bake for a further 10 minutes until the peppers are tender and the sauce is bubbling. If the sauce looks thin, lift the peppers out briefly and simmer the sauce in a saucepan for 3 to 5 minutes until lightly thickened, then return it to the dish.
- Finely chop the parsley and stir most of it into the sauce. Serve the peppers with plenty of sauce spooned over, finished with the remaining parsley.
Recipe notes
Tips
- Choose peppers that sit flat in the baking dish so they do not tip while baking; if needed, trim a very thin slice from the base to level them.
- For the best texture, drain the rice well and let it steam-dry for a couple of minutes so the filling stays fluffy rather than wet.
- If serving vulnerable groups, ensure the minced beef is cooked until no pink remains and the peppers are piping hot throughout.
Substitutions
- Replace Dry White Wine with the same amount of water for an alcohol-free sauce.
- Replace Sweet paprika with smoked paprika for a deeper, smoky flavour.
- Replace Fresh parsley with fresh basil for a softer, sweeter herb finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with the sauce. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
