Gefüllte Paprika in Tomato Sauce (German Stuffed Peppers)

In German-style cooking, gefüllte Paprika are homely stuffed peppers served with a generous tomato sauce rather than as a dry baked filling. Green peppers bring a gentle bitterness that works well with minced beef, rice, parsley and sweet paprika, while the passata and beef stock cook down into a savoury, tangy sauce for spooning over each portion. The rice keeps the filling tender and helps it hold together, making the dish satisfying without feeling heavy. It is a practical dinner for cooler evenings, especially with boiled potatoes, bread or a simple salad to catch the sauce.

Why this recipe works

  • Well-seasoned filling: Softened onion, garlic, parsley and sweet paprika season the beef and rice from the inside rather than relying only on the sauce.
  • Tangy but savoury sauce: Tomato passata brings brightness, while beef stock gives the sauce enough depth to serve generously with the peppers.
  • Good for leftovers: The peppers store well with their sauce, which helps keep the filling moist during reheating.

Timing notes

  • Cool the rice briefly: Let the cooked rice cool for a few minutes before mixing it with the beef so the filling stays easy to handle.
  • Rest before serving: A short rest after baking helps the filling settle and makes the peppers easier to serve without falling apart.

Texture tips

  • Keep the filling juicy: Cook the rice only until just tender before baking; overcooked rice can make the filling dense.
  • Tender peppers: Keep the dish covered for most of the baking time so the peppers steam gently in the tomato sauce.

Ingredient notes

  • Pepper choice: Green peppers give a slightly sharper, more savoury flavour, which works well with the beef and tomato sauce.
  • Paprika style: Sweet paprika keeps the dish mild and rounded; hot paprika can be used if you want more warmth.

Make-ahead tips

  • Reheat with sauce: Reheat covered at 180°C (355°F) until piping hot, adding a little extra stock if the sauce has thickened.
  • Freeze in portions: Freeze cooked peppers with some sauce so they defrost and reheat without drying out.

  1. Heat the oven to 180°C (355°F). Cook the rice in a saucepan of lightly salted water until just tender, then drain well and cool for 5 minutes.
  2. Meanwhile, cut the tops off the peppers and remove the seeds and membranes. Finely chop the onion and crush the garlic; finely chop the parsley.
  3. Heat the olive oil in a frying pan over medium heat and cook the onion with a pinch of the salt until softened, about 6 minutes. Add the garlic and cook for 1 minute more, then scrape into a mixing bowl to cool slightly.
  4. Add the minced beef, cooked rice, parsley, sweet paprika, black pepper and the remaining salt to the bowl. Mix thoroughly until evenly combined, then divide and pack the filling into the peppers.
  5. Stir the tomato passata and beef stock together in the baking dish, then nestle the stuffed peppers into the sauce. Spoon a little sauce over the tops, cover the dish with foil, and bake for 45 minutes until the peppers are tender and the filling is cooked through.
  6. Remove the foil and bake for 5 minutes to reduce the sauce slightly. Rest for 5 minutes, then serve with plenty of sauce spooned over the top.

Recipe notes

Tips

  • For the juiciest filling, avoid overcooking the rice; it should be just tender before it goes into the oven.
  • If your peppers will not stand upright, slice a very thin piece from the base to level them, taking care not to cut through.
  • If cooking for anyone vulnerable, make sure the filling is piping hot all the way through before serving.

Substitutions

  • Replace Minced beef with minced turkey for a lighter filling.
  • Replace Sweet paprika with hot paprika for a spicier result.
  • Replace Fresh parsley with fresh dill for a more aromatic, traditional-style herb note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container with the sauce. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of beef stock if the sauce has thickened. Freeze portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
