Costillas en Salsa Verde (Pork Ribs in Tomatillo Sauce)

Costillas en salsa verde brings together tender bone-in pork ribs and a bright Mexican tomatillo sauce, giving a dish that is savoury, tangy and gently spicy rather than heavy. The ribs are simmered first so they stay juicy and intact, then finished in a cooked salsa verde made with softened tomatillos, jalapeño, garlic, onion, coriander and lime. That final simmer lets the sauce cling to the meat while keeping its fresh green character. Serve it hot with warm corn tortillas for scooping up the glossy sauce, with extra lime if you prefer a sharper finish.

Why this recipe works

  • Layered green sauce: Cooking the tomatillos, jalapeños, onion and garlic before blending softens their sharpness and gives the salsa verde a rounder flavour.
  • Tender, savoury ribs: A gentle simmer makes the pork tender while keeping the ribs intact enough to finish neatly in the sauce.
  • Bright but balanced: Tomatillos and lime bring acidity, while the pork cooking liquid adds savoury depth and helps the sauce cling.

Adjust the heat

  • Make it milder: Remove the jalapeño seeds before simmering, or use fewer chillies for a gentler salsa verde.
  • Add more heat: Keep the jalapeño seeds in the sauce, or add an extra chilli if you prefer a sharper, hotter finish.
  • Balance the chilli: If the sauce tastes too hot, loosen it with a little reserved rib cooking liquid and finish with lime to keep the flavour bright.

Timing notes

  • Most of the time is hands-off: The active preparation is relatively short; the longer simmer is what tenderises the ribs and builds the base for the sauce.
  • Serve once the sauce clings: The ribs are ready when they are glossy and coated, with the salsa verde thick enough to spoon over them.

Make-ahead tips

  • Good made ahead: The ribs and sauce can be cooked in advance and refrigerated; the flavour settles well overnight.
  • Reheat gently: Warm in a saucepan over a low heat with a splash of water so the pork stays tender and the sauce loosens evenly.
  • Freezes well: Freeze the ribs in sauce in portions, then defrost overnight in the fridge before reheating.

Ingredient notes

  • Tomatillos define the sauce: Look for firm tomatillos with fresh-looking husks; rinsing removes their natural stickiness before cooking.
  • Use fresh coriander: Fresh coriander gives salsa verde its clean herbal character; dried coriander will not provide the same brightness.
  • Finish with lime to taste: Add lime at the end if the sauce needs extra lift, especially after simmering with the pork.

  1. Cut the ribs into individual pieces. Peel and quarter the onion, and peel the garlic. Remove the husks from the tomatillos and rinse well to remove any stickiness.
  2. Put the ribs in a large pot with the water and 1 tsp of the fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 60 to 70 minutes, skimming any foam, until the ribs are tender but not falling apart. Lift the ribs out with tongs and set aside; reserve 300 ml of the cooking liquid.
  3. While the ribs simmer, put the tomatillos, jalapeños, onion and garlic into a saucepan and cover with water. Bring to a simmer and cook for 10 to 12 minutes, until the tomatillos turn olive-green and soften. Drain, reserving a splash of the cooking water.
  4. Blend the cooked tomatillos, jalapeños, onion and garlic with the fresh coriander, the juice of the lime, the remaining 1 tsp fine sea salt, and a little reserved cooking water until smooth. Pour the salsa verde back into the saucepan and simmer for 5 to 7 minutes, stirring, until it thickens slightly and the flavour tastes rounded. If it is too thick, loosen with a little of the reserved rib cooking liquid.
  5. Add the ribs to the salsa verde and simmer gently for 8 to 10 minutes, turning to coat, until the ribs are glossy and the sauce clings. Taste and adjust with a little more lime juice if you want it sharper. Serve hot, spooning plenty of sauce over the ribs.

Warm corn tortillas

Tips

  • For a milder sauce, remove the seeds from the jalapeños before simmering them with the tomatillos.
  • If the salsa verde tastes a little flat, simmer it for a few minutes longer to concentrate, then brighten with a final squeeze of lime.
  • Keep the simmer gentle once the ribs are in the sauce so they stay intact and the sauce stays vibrant.

Substitutions

  • Replace 1 jalapeno pepper with 1 jalapeno pepper (seeds removed) for less heat.
  • Replace Fresh coriander with a smaller amount of Fresh coriander for a subtler herbal flavour.
  • Replace Lime with a smaller amount of Lime for a less tangy finish.

Storage

  • Refrigerate up to 3 days
  • Cool the ribs and sauce quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over a low heat with a splash of water until piping hot. Freeze in portions for up to 2 months; defrost overnight in the fridge before reheating.
