Tilapia en Salsa Verde (Tilapia in Tomatillo Green Sauce)
Why this recipe works
- Bright, balanced sauce: Tomatillos bring natural tanginess, while onion, garlic and coriander round the salsa out with savoury and herbal depth.
- Fast weeknight method: Blending the raw salsa ingredients keeps the prep simple, and the fish cooks directly in the sauce in minutes.
- Gentle cooking: A low simmer helps the tilapia stay tender and makes it easy to see when the fillets turn opaque and flake cleanly.

Adjust the heat
- For a gentler salsa: Remove the jalapeño seeds and membranes before blending, or use less chilli for a softer heat.
- For more heat: Leave the jalapeño seeds in, or add extra chilli gradually so the tomatillo flavour still comes through.
Texture tips
- Keep the fish tender: Simmer gently rather than boiling; vigorous bubbling can break up the fillets before they are fully cooked.
- For a smoother sauce: Blend the salsa thoroughly, then cook it until glossy so it lightly coats the fish.
Ingredient notes
- Rinse the tomatillos: After removing the papery husks, rinse away the sticky coating so the sauce tastes clean and fresh.
- Fish swaps: Cod works well as a firmer alternative, but thicker fillets may need a little longer over low heat.
Make-ahead tips
- Make the sauce ahead: The salsa verde can be blended and cooked in advance, then reheated gently before adding the fish.
- Best freshly cooked: Tilapia has the best texture when cooked just before serving, as reheating can make delicate fillets break apart.

Instructions
- Remove and discard the papery husks from the tomatillos, then rinse well to remove any stickiness. Roughly chop the onion, peel the garlic, and slice the jalapeño (remove the seeds if you want a milder sauce).
- Put the tomatillos, onion, garlic, jalapeño and fresh coriander into a blender. Blend until smooth, scraping down the sides as needed.
- Warm the sunflower oil in a saucepan over a medium heat. Pour in the green sauce and cook for 5 to 7 minutes, stirring often, until it turns glossy and smells fragrant.
- Nestle the tilapia into the sauce in a single layer. Reduce the heat to low, cover, and gently simmer for 6 to 8 minutes until the fish is opaque and flakes easily.
- Cut the lime into wedges. Warm the corn tortillas in a dry pan or directly over a low flame until pliable, then serve the fish and sauce with the tortillas and lime for squeezing.

Tips
- For a smoother, brighter salsa verde, blend for an extra 30 seconds, then let the sauce bubble gently until it thickens slightly and coats the back of a spoon.
- If your tilapia fillets are thick, keep the heat low and give them an extra 1 to 2 minutes so they cook through without breaking up.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until fully opaque and flakes easily throughout.
Substitutions
- Replace tilapia with cod fillet for a firmer, flakier result.
- Replace sunflower oil with olive oil for a fruitier flavour.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate the fish in the sauce in a sealed container. Reheat gently in a saucepan over a low heat until piping hot, adding a small splash of water if the sauce has thickened too much.
