Slow Cooker Pulled Pork Sandwiches
Why this recipe works
- Smoky, tangy depth: Smoked paprika, tomato purée, barbecue sauce and cider vinegar give the pork a rounded balance of sweetness, acidity and savoury depth.
- Tender, satisfying filling: Pork shoulder is well suited to long, gentle cooking, becoming soft enough to shred while staying juicy in the sauce.
- Easy to prepare ahead: The pulled pork reheats well with its sauce, making it practical for relaxed dinners, batch cooking or casual entertaining.

Timing notes
- Mostly hands-off: The active preparation is short, but the pork needs a full slow-cooking window to become tender enough to pull apart easily.
- Good for serving later: Once shredded and sauced, the pork can sit on the slow cooker’s low setting for up to 1 hour, stirred occasionally so it stays moist.
- Assemble just before eating: For the best texture, toast the buns and add the slaw shortly before serving rather than building the sandwiches far in advance.
Texture tips
- Keep the pork juicy: After shredding, stir the meat back into enough cooking liquid to coat it well without making the filling loose.
- Protect the buns: Lightly toasting the cut sides helps the bread hold up against the saucy pork.
- Add contrast with slaw: Finely shredded cabbage gives the sandwich a fresh crunch that balances the soft pork and roll.
Ingredient notes
- Use pork shoulder: Boneless pork shoulder has enough fat and connective tissue to become tender during slow cooking without drying out.
- Balance the sauce: Apple cider vinegar cuts through the richness of the pork; add a little more only if the finished sauce tastes too sweet.
- Choose the barbecue sauce carefully: The sauce shapes the final flavour, so a smoky, not-too-sweet barbecue sauce gives the most balanced result.
Make-ahead tips
- Keep components separate: Store the pulled pork and cabbage slaw in separate airtight containers so the slaw stays crisp.
- Freeze the pork only: The cooked pulled pork can be frozen with its sauce for up to 2 months; the slaw is best made fresh.
- Reheat gently: Warm the pork with its sauce over a low heat, or covered in a 180°C (355°F) oven until piping hot, adding a splash of water if needed.

Instructions
- Thinly slice the onion and crush the garlic. In the slow cooker, stir together the onion, garlic, brown sugar, smoked paprika, fine sea salt, black pepper, tomato purée, apple cider vinegar and half the barbecue sauce.
- Nestle the pork shoulder into the sauce and turn it to coat. Cover and cook on low for 8 hours, until the pork is very tender and pulls apart easily with a fork.
- Transfer the pork to a board and shred it, discarding any large pieces of fat. Skim excess fat from the cooking liquid if needed, then return the pork to the slow cooker and stir in the remaining barbecue sauce. Cook for 10 minutes more to let the flavours meld.
- Finely shred the white cabbage and toss with the mayonnaise until evenly coated. Taste and adjust with a little more black pepper if you like.
- Warm the burger buns in a dry frying pan over a medium heat for 1 to 2 minutes, cut-side down, until lightly toasted. Pile in the pulled pork and top with the cabbage slaw. Serve straight away.

Serving suggestions
This recipe pairs well with:
Tips
- For neater sandwiches, lift the pork out with tongs and stir it back into just enough of the cooking liquid to keep it juicy, rather than adding it all.
- If serving later, keep the pork warm on the slow cooker’s low setting for up to 1 hour, stirring occasionally so it stays saucy.
- If you are pregnant, elderly, or immunocompromised, choose pasteurised mayonnaise for the slaw.
Substitutions
- Replace Barbecue sauce with a smoky, spicy barbecue sauce if you want more heat.
- Replace Apple cider vinegar with white wine vinegar for a slightly sharper tang.
- Replace Mayonnaise with Greek yogurt for a lighter slaw.
Storage
- Refrigerate up to 3 days
- Store the pulled pork and slaw separately in airtight containers. Reheat the pork with its sauce in a saucepan over a low heat, or in a 180°C (355°F) oven covered until piping hot; add a splash of water if it looks dry. Freeze pulled pork only (not the slaw) for up to 2 months and defrost overnight in the fridge before reheating.
