Enchiladas Verdes with Chicken
Why this recipe works
- Cooked salsa verde: Softening the onion, garlic, tomatillos and serrano before blending gives the sauce a deeper savoury base than a raw salsa.
- Bright but rounded: Tomatillos and lime bring sharpness, while the chicken filling and Mexican crema soften the chilli heat and acidity.
- Saucy baked finish: Salsa verde underneath and over the tortillas keeps the enchiladas moist as they bake into a bubbling casserole-style dish.

Adjust the heat
- For gentler heat: Remove the serrano seeds before cooking, or swap the serrano for jalapeño for a softer chilli flavour.
- For more heat: Leave the serrano seeds in, or add extra fresh chilli to the sauce before blending.
- Balance at the table: Use crema to soften the chilli heat, then add lime to taste for a fresher finish.
Authenticity notes
- Tomatillo base: Tomatillos give salsa verde its distinctive tart green flavour; they are not the same as green tomatoes.
- Soft baked style: Rolled corn tortillas baked in green sauce create a homely, saucy enchilada rather than a crisp presentation.
- Fresh finishes: Crema, onion, coriander and lime add the cool, sharp and fresh elements that suit a bright green chilli sauce.
Common mistakes
- Rolling cold tortillas: Cold corn tortillas are more likely to split, so warm them just until flexible before filling.
- Letting the sauce get too thick: The salsa verde should coat the tortillas but still flow; loosen it gradually with water if it has reduced too much.
- Not cooking the chicken through: Cook the thighs fully before shredding; the meat should be piping hot with clear juices and no pink centre.
Make-ahead tips
- Prepare components ahead: Make the salsa verde and cook the chicken in advance, then assemble just before baking so the tortillas do not sit too long in sauce.
- Freeze without fresh toppings: Freeze portions without crema, onion, coriander and lime, then add those fresh finishes after reheating.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, uncovering near the end if the sauce needs to reduce slightly.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Finely chop half the white onion and thinly slice the remaining half for serving; set the sliced onion aside. Peel the garlic, then roughly chop it.
- Heat the sunflower oil in a saucepan over medium heat and cook the chopped onion with a pinch of the fine sea salt for 4 to 5 minutes until softened. Add the garlic and cook for 30 seconds until fragrant. Add the tomatillos and serrano pepper, then cook for 8 to 10 minutes, stirring, until the tomatillos soften and start to collapse.
- Tip the tomatillo mixture into a blender and blend until smooth, then taste and season with more fine sea salt if needed. Return the sauce to the pan and keep it on a low heat while you cook the chicken. If the sauce seems very thick, loosen it with a splash of water and warm through.
- Season the chicken thighs with fine sea salt. Heat a frying pan over medium-high heat and cook the chicken for 5 to 6 minutes per side until cooked through and the juices run clear. Transfer to a bowl and shred with two forks.
- Pour about one third of the warm salsa verde into a baking dish and spread it out. Warm the corn tortillas briefly in the frying pan, 10 to 15 seconds per side, just until pliable. Fill each tortilla with shredded chicken, roll up, and arrange seam-side down in the dish.
- Pour the remaining salsa verde over the enchiladas, making sure the tortillas are well coated. Bake for 15 minutes until bubbling and hot throughout. Rest for 5 minutes before serving.
- Spoon the mexican crema over the enchiladas. Sprinkle with the reserved sliced white onion and fresh coriander, then squeeze over the lime to taste. Serve straight away.
Recipe notes
Tips
- For a milder heat, remove the seeds from the serrano pepper before cooking, or use just one pepper.
- If your corn tortillas crack when rolling, warm them a little longer so they soften and become flexible.
- Chicken should be cooked until piping hot all the way through; if you are serving anyone who is pregnant, elderly, or immunocompromised, take extra care to ensure it is fully cooked.
Substitutions
- Replace mexican crema with greek yogurt for a tangier finish.
- Replace serrano pepper with jalapeno pepper for a gentler heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Freeze portions (without the mexican crema, onion, coriander and lime) for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot.
