Enchiladas Navideñas (Chicken Enchiladas with Red and Green Sauces)

Named for their red-and-green presentation, enchiladas navideñas bring together the familiar comfort of chicken-filled corn tortillas with two distinct sauces: a tomato and guajillo red sauce, and a tangy tomatillo green sauce. The tortillas are rolled around tender shredded chicken, baked until the sauces bubble, then finished with crema, queso fresco, coriander and lime. It is a generous, colourful Mexican dinner with savoury depth, gentle chilli warmth and fresh acidity, suited to sharing at the table without feeling overly heavy.

Why this recipe works

  • Two-sauce depth: The red tomato and guajillo sauce brings warmth and savoury depth, while the tomatillo sauce adds acidity and freshness.
  • Juicy chicken filling: Gently poaching the chicken in stock keeps it tender and creates a flavourful liquid for blending into both sauces.
  • Built for sharing: Baking the rolled tortillas in one dish makes the enchiladas easy to serve at the table, with toppings added just before eating.

Adjust the heat

  • For a milder version: Use less guajillo chilli powder and choose mild Anaheim peppers; the sauces will still have colour and depth without as much heat.
  • For more heat: Increase the chilli powder slightly or add a hotter fresh chilli to the green sauce before blending.

Texture tips

  • Keep the tortillas intact: Warm the corn tortillas just until pliable before filling; cold tortillas are more likely to crack, while over-soaked ones can turn fragile.
  • Moisten the filling: Stirring a little green sauce into the shredded chicken helps prevent the filling from drying out during baking.

Make-ahead tips

  • Prepare the sauces ahead: Both sauces can be made in advance and kept chilled, then used to assemble and bake the enchiladas when needed.
  • Freeze without toppings: Freeze the baked enchiladas before adding crema, queso fresco and coriander, then thaw overnight and reheat until piping hot.

Serving ideas

  • Serve with rice or beans: Mexican-style rice, black beans or refried beans make this a fuller dinner without competing with the two sauces.
  • Finish at the table: Add crema, queso fresco, coriander and lime after baking so the toppings stay fresh and the sauces remain distinct.

  1. Heat the oven to 200°C (390°F). Peel and finely chop the onion, then peel the garlic and roughly chop it. Set aside a small handful of coriander for serving, then chop the rest.
  2. Put the chicken thighs in a saucepan with the chicken stock, half the onion, 2 cloves of garlic, 1 tsp fine sea salt and the black pepper. Bring to a gentle simmer, then cook for 15 to 18 minutes until the chicken is cooked through and tender. Lift the chicken out to a bowl and shred; reserve the poaching stock.
  3. Make the red sauce: heat 1 tbsp olive oil in a frying pan over medium heat and cook the remaining onion for 5 minutes until softened. Add the remaining garlic and cook for 30 seconds, then add the plum tomatoes, guajillo chili powder, ground cumin and a pinch of salt. Cook for 6 to 8 minutes until the tomatoes collapse and the mixture looks jammy.
  4. Scrape the red sauce into a blender and add 150 ml of the reserved poaching stock. Blend until smooth, then taste and season with a little more salt if needed. Pour into a bowl and rinse the blender jug.
  5. Make the green sauce: put the tomatillos and anaheim peppers in the same frying pan with 1 tbsp olive oil and cook over medium-high heat for 6 to 8 minutes until softened and lightly blistered. Add a splash of the reserved stock if the pan looks dry, then scrape everything into the blender. Add 150 ml reserved stock, blend smooth, then stir in the chopped coriander and squeeze in half the lime; season with salt to taste.
  6. Warm the tortillas briefly in the frying pan, 10 to 15 seconds per side, just until pliable. Stir 2 tbsp of the green sauce into the shredded chicken to keep it juicy. Spoon the chicken down the centre of each tortilla, roll up, and arrange seam-side down in a baking dish.
  7. Pour the red sauce over one half of the enchiladas and the green sauce over the other half, keeping the colours distinct. Bake for 12 to 15 minutes until bubbling at the edges and hot throughout. Rest for 5 minutes before topping.
  8. Drizzle with the mexican crema, crumble over the queso fresco, and scatter over the reserved coriander. Serve with the remaining lime cut into wedges for squeezing at the table.

Recipe notes

Tips

  • If your tortillas crack when rolling, warm them a little longer until flexible, then roll while still warm.
  • For a cleaner split of colours, spoon the sauces on gently and avoid spreading them across the centre line.
  • Food safety: make sure the chicken is cooked through before shredding, and serve the baked enchiladas piping hot.

Substitutions

  • Replace mexican crema with sour cream for a similar tang and richness.
  • Replace queso fresco with cotija cheese for a saltier finish.
  • Replace chicken thighs with chicken breast if you prefer a leaner filling; keep the poaching gentle so it stays tender.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a covered container for up to 3 days. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add the mexican crema, queso fresco and fresh coriander after reheating. Freeze the baked enchiladas without the toppings for up to 2 months, then thaw overnight in the fridge before reheating.
