Scotch Broth with Lamb and Pearl Barley
Why this recipe works
- Classic slow simmer: A gentle simmer gives the lamb time to soften while the barley releases starch and thickens the broth naturally.
- Savoury depth: Browning the lamb first builds a richer base before the vegetables, barley and stock are added.
- Hearty but balanced: Root vegetables add sweetness and body, while fresh parsley keeps the finish clean rather than heavy.

Timing notes
- Mostly hands-off: The chopping and browning are the active parts; most of the time is a steady simmer while the lamb and barley become tender.
- Serve after thickening: The broth is ready when the barley is plump and the lamb is tender. If it sits before serving, loosen it with a little hot stock or water.
Ingredient notes
- Cut the vegetables evenly: Small, even dice help the leek, carrot and swede soften at the same rate and distribute well through the broth.
- Use pearled barley: Pearled barley cooks into a plump, tender grain and gives Scotch broth its characteristic body.
Texture tips
- Keep the simmer gentle: A steady, low simmer helps the lamb become tender without toughening and prevents the barley from breaking down too aggressively.
- Adjust the final consistency: Barley continues to absorb liquid as it cooks and rests, so add a little hot stock or water if the broth becomes too thick.
Make-ahead tips
- Good for making ahead: The flavour deepens after chilling, though the barley will thicken the broth further.
- Reheat gently: Warm in a pot over low to medium heat, adding a little water or stock as needed until the soup is piping hot.
- Freezer-friendly: Cool completely before freezing in sealed containers, then defrost in the fridge and reheat gently.

Instructions
- Trim the onion, leek, carrots and swede, then cut them into small, even dice. Rinse the pearled barley under cold water until the water runs mostly clear. Pick the parsley leaves and finely chop them.
- Heat the olive oil in a large pot over medium heat. Add the lamb, season with the salt and black pepper, and cook for 6 to 8 minutes, turning, until lightly browned in places. Stir in the onion and leek and cook for 5 minutes until softened.
- Add the carrots, swede, pearled barley and bay leaves, then pour in the beef stock. Bring to a gentle boil, then reduce to a steady simmer. Cook for 75 to 85 minutes, stirring occasionally, until the lamb is tender and the barley is plump and the broth has thickened.
- Taste and adjust the seasoning with a little more salt and pepper if needed. Stir in most of the parsley and simmer for 1 minute, then ladle into bowls. Finish with the remaining parsley and serve hot.
Recipe notes
Tips
- Keep the broth at a gentle simmer rather than a rapid boil so the lamb stays tender and the barley thickens the soup without breaking down.
- If the broth thickens too much as it simmers, loosen it with a splash of hot beef stock and simmer for a few minutes to bring it back together.
Substitutions
- Replace Beef stock with Chicken stock for a lighter, slightly sweeter broth.
- Replace Fresh parsley with Fresh dill for a different herbal finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently in a pot, adding a splash of water if it has thickened, until piping hot.
