Modern Tlayuda Flatbread (Crisp Tortilla with Beans and Cheese)
Why this recipe works
- Crisp base: Pre-baking the tortillas before topping helps them stay dry, rigid and sliceable.
- Layered savoury flavour: Cumin, garlic, tomatoes and black beans create a rich spread that anchors the cheese and vegetables.
- Fresh finish: Avocado adds creaminess while lime and coriander cut through the melted cheese and beans.

Texture tips
- For the crispest tortilla: Bake the tortillas until they feel dry and firm before adding the beans; a soft base will turn flexible once topped.
- Keep the beans spreadable: Simmer the bean mixture until it holds its shape on the spoon, so it forms a sturdy layer rather than soaking into the tortilla.
Ingredient notes
- Oaxaca-style cheese: Queso Oaxaca gives the best stretch and mild dairy flavour, but mozzarella is a practical alternative with a similar melt.
- Use lime to balance richness: Add the lime at the table or just before serving so the acidity stays bright against the beans, cheese and avocado.
Authenticity notes
- Modern tlayuda style: Traditional tlayudas are usually made with very large Oaxacan tortillas; this version uses readily available flour tortillas and a baked flatbread-style method.
- Sharing-style serving: Slicing it into wedges keeps the spirit of a generously topped street-food flatbread while making it easy to serve at home.
Make-ahead tips
- Prepare components ahead: The bean mixture and grilled vegetables can be made in advance, then assembled with the tortillas and cheese just before baking.
- Reheat for crunch: Reheat leftover slices on a baking tray at 200°C (390°F) until piping hot and crisp again, adding avocado and lime afterwards.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the red onion into thin wedges and the red pepper into thick strips.
- Toss the onion and pepper with 1 tbsp olive oil and 0.25 tsp fine sea salt. Grill on a hot grill for 6 to 8 minutes, turning, until charred and just tender.
- Finely grate the garlic. Warm the remaining 1 tbsp olive oil in a saucepan over medium heat, then cook the garlic and ground cumin for 30 seconds until fragrant.
- Add the canned chopped tomatoes and simmer for 4 to 5 minutes until slightly reduced. Stir in the canned black beans (with their liquid) and cook for 6 to 8 minutes, mashing with a wooden spoon until thick and spreadable; season with the remaining salt.
- Put the flour tortillas on a baking tray and bake for 4 minutes, then flip and bake for 3 to 4 minutes until crisp and lightly golden. Keep the oven on.
- Spread the refried beans over each crisp tortilla, leaving a small border. Tear the queso Oaxaca over the top, then scatter over the charred vegetables.
- Bake for 5 to 7 minutes until the cheese is melted and bubbling at the edges. While it bakes, slice the avocado, cut the lime into wedges, and roughly chop the fresh coriander.
- Top the hot tlayudas with avocado and fresh coriander, then squeeze over lime to taste. Slice into wedges and serve straight away like a pizza for sharing.

Tips
- For the crispest base, bake the tortillas until they feel dry and rigid before adding the toppings.
- If the beans look loose, simmer for a couple more minutes; they should hold their shape when spread.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the dish is served piping hot and the cheese is fully melted.
Substitutions
- Replace Queso Oaxaca with Mozzarella for a similar melt and stretch.
- Replace Olive oil with Canola oil for a more neutral flavour.
- Replace Fresh coriander with Fresh flat-leaf parsley if you prefer a milder herb finish.
Storage
- Refrigerate up to 2 days
- Store leftover slices in an airtight container in the fridge. Reheat on a baking tray at 200°C (390°F) for 6 to 8 minutes until piping hot and re-crisped; add the avocado and lime after reheating.
