Methi Thepla with Yoghurt and Pickle
Why this recipe works
- Layered spice and herbs: Fresh fenugreek brings a distinctive savoury bitterness, while ajwain, cumin, turmeric and Kashmiri chilli add warmth without overpowering the flatbread.
- Thin rolling gives the right texture: Rolling the dough thin helps each thepla cook quickly on the tawa, giving soft centres with lightly crisp, speckled edges.
- Good for packing and storing: Thepla hold their texture well once cooled, making them practical for lunchboxes, short-term refrigeration or freezing between sheets of baking paper.

Ingredient notes
- Choose tender fenugreek leaves: Use the tender leaves and discard tough stems, which can make the dough fibrous and bitter.
- Use plain full-fat yoghurt: Whole milk yoghurt helps make the dough supple and adds gentle tang; thicker yoghurt may need a little more water to loosen the dough.
- Kashmiri chilli adds colour more than heat: Kashmiri chilli gives warmth and a reddish tint while keeping the spice level relatively mild.
Common mistakes
- Avoid an overheated pan: If the thepla darkens too quickly, lower the heat so the centre cooks through before the outside over-browns.
- Do not make the dough sticky: Add water gradually; the dough should be soft and pliable but not wet, or it will be difficult to roll thinly.
- Rest before rolling: A short rest makes the dough easier to roll and helps the cooked thepla stay more tender.
Make-ahead tips
- Cool before stacking: Let the cooked thepla cool completely before stacking or packing, especially for lunchboxes, to prevent trapped steam from softening them too much.
- Freeze with separators: Freeze cooked thepla with baking paper between each one so they can be reheated individually.
- Reheat in a dry pan: Warm refrigerated or frozen thepla in a frying pan until hot throughout, using moderate heat so they soften before the surface crisps.
Serving ideas
- Serve with yoghurt: Plain yoghurt balances the spices and adds a cooling contrast to the warm flatbread.
- Add mango pickle: Mango pickle brings sharpness, salt and chilli heat, making it a classic partner for methi thepla.
- Serve warm or room temperature: They are best warm from the pan, but also work well at room temperature once cooled properly.

Ingredients
Instructions
- Pick over the fenugreek leaves, discarding any tough stems, then rinse and shake dry. Finely chop the leaves.
- In a mixing bowl, combine the whole wheat flour, ajwain seeds, turmeric, Kashmiri chilli, cumin and fine sea salt. Add the chopped fenugreek leaves and mix well so the leaves are evenly coated in the flour.
- Add 80 g of the yogurt and 1 tbsp of the vegetable oil, then mix to form a shaggy dough. Add the water a little at a time until you have a soft, pliable dough that is not sticky.
- Knead for 3 to 4 minutes until smooth, then cover and rest for 10 minutes. This makes the dough easier to roll and helps the thepla stay tender.
- Divide the dough into 6 equal pieces and roll each into a ball. Roll each ball into a thin round, about 16 to 18 cm across, dusting lightly with a little extra whole wheat flour only if needed.
- Heat a tawa or large frying pan over medium-high heat until hot. Cook one thepla for about 30 to 45 seconds, until small bubbles appear, then flip and cook the other side for 30 to 45 seconds.
- Drizzle a little of the remaining vegetable oil around the edges and over the surface, then flip and cook until speckled with golden-brown spots. Flip once more and cook until cooked through and lightly crisp at the edges, then repeat with the remaining thepla.
- Serve the warm thepla with the remaining plain yogurt and the pickle relish on the side. If you are packing for lunch, let the thepla cool completely before stacking.
Recipe notes
Tips
- Keep the pan hot but not smoking: if the thepla browns too fast, lower the heat so the centre cooks through before the outside darkens.
- For the best texture, roll the thepla fairly thin and use just enough oil to create speckling without making them greasy.
- If serving to young children, reduce the ground Kashmiri chili slightly and offer extra yogurt for dipping.
Substitutions
- Replace Whole milk yogurt with Greek yogurt for a thicker, slightly tangier dough; add a splash more Water if the dough feels tight.
- Replace Ajwain seeds with Cumin seeds for a different, warm spice note.
Storage
- Refrigerate up to 3 days
- Cool the thepla completely, then refrigerate in an airtight container for up to 3 days. Reheat in a dry frying pan over medium heat for 30 to 60 seconds per side until piping hot. Freeze with sheets of baking paper between thepla, then reheat from frozen in a frying pan over low-medium heat until hot throughout.
